We laugh so much in this kitchen ❤️ Warmer weather calls for this refreshing recipe that is a summer time must have, Chickpea Salad! My @goya chickpeas, lemon, red onion and all the other fresh ingredients come together so beautifully for this dish and make this one of my go to BBQ sides that I bring when I’m Invited and serve when I’m hosting one! So easy and a great dish if you have to whip up something fast because no cooking, that’s why it’s my favorite summer time dish 😂 some tips for when you make this dish is to always remember to season the chickpeas first, adds so much flavor, don’t skip the oregano!, as you throw in each ingredient make sure to stir it in before adding the next and follow after each step, and store the leftovers in some sort of tupperware so you can easily shake it up and to mix everything back up! Recipes are unique so make sure to add whatever you want or substitute! Everyone has different preferences, no judgement here, unless you don’t like parsley because then we have an issue😂. Lastly, yes I know I said green onions and not olives and yes Mauro doesn’t know what a cucumber is, we are really losing it!

Chickpea salad
dressing
- 1/2 cup of evoo
- Juice of 1 lemon
- 1/4 cup of red wine vinegar
- 1/4 cup of honey
- Extra tbsp of honey for good measure!
- 1 tbsp of oregano
Salad
- 2 cans of goya chick peas
- 4 Persian cucumbers
- 1/2 red onion chopped
- 1/4 cup of fresh parsley
- 1 bag of Trader Joe’s artichoke hearts (thawed out) or 12oz/340 g bag of any kind
- Instead of frozen you can always use canned artichoke, for this recipe 1 can is good
- 1 cup of corn
- 1/2 cup of green olives sliced
