Miss Talli Faye, I made us some enchiladas with the enchilada sauce like you made it for this recipe. We just loved it! Have you ever used the Fiesta Bolner’s enchilada sauce mix instead of McCormick brand? I haven’t tried it, but I was tempted to try it. I’ve made the enchiladas with the McCormick’s mix 2 times now and we love it so much. I’ve made numerous enchilada sauces from scratch and we like this sauce the best! I make enough for 2 days and serve with homemade Spanish rice and homemade refried beans.

Yum! I will try this. Congrats on your subs! A friend of mine showed me a short cut to softening corn tortillas. Just throw them in a microwave for about 30 seconds and they will get soft and pliable. I don't use a microwave myself, but I know some people do. Could save you a lot of time if you were making a lot of enchiladas.
