About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Looks yummy, my mom used to spent her winters in Thailand. Allways when i smell thai food it allmost makes me cry and i am over 50 years old man. From Finland with a lots of love ❤.

You are by far my favorite KZbin chef! I love all your recipe! I love how detailed you are and really show an easy step by step process in making your dishes. Thank you for all the work you do. Keep it up! I don’t eat pork but I will try this recipe with chicken.

This looks so good. Can't wait till tonight and I'll make this for my family, just hope that 8 hours of marinating is enough. Found some fine morning glory at my asian shop yesterday so I'll pair this dish with Pad Pak Boong.

That sauce is the one we usually made for eating lots of roasted meat like chicken and pork in Indonesia; the difference are we added sambal oelek and no toasted sesame seed. But I love to try this.

I was in Thailand way back in 88-89 and I was absolutely addicted to this dish! There was another dish I like,but unfortunately forgot the name,it was a thin noodle type of soup with small meat balls! If I heard the name again I would remember it. Thanks for showing how this dish is prepared! Might give it a go.

I'm glad you used pork loin since it is less fatty than pork butt as you mentioned. What I like the most about this recipe is that you made a dipping sauce and a gravy. i live in NY and in the chinese bbq places they only give you the dipping sauce that taste pretty much like soy sauce. I'm gonna try your recipe since it is not that difficult to make and the end result is amazing. You are so talented and it is such a pleasure watching your videos. Keep up the good work and continue posting more recipes!!!

Smashed it....Ratchada Market in Bangkok does the best I'ver ever had. A friend took me there to prove it. I now short cut the char siu pork by using Kum Lee Char Siu marinade, easy peasy. Cheating I know but so fast...

First of all, this is great cause I LOVE BBQ pork!!! I’d LOVE to see your take on the Filipino classic, Pancit Palabok. It is a Filipino smoked fish and pork rice noodle dish with dried shrimp. (Hibe in Filipino)

Thanks for yet another great recipe! I only had pork belly to use so I used that instead. Roasted it for a little longer than 45 minutes and it came out great. I'm curious how differently you'd do it with pork belly cut?

EXCELLENT!!!! I've been making various char siu but have been eating it by itself or adding it to things like noodles or fried rice. I wanted it with plain rice but it is too dry and adding more marinade (for sauce) is a bit too much of the same flavors as the pork. I was going to start experimenting with different sauces but here is exactly what I was looking for. Unfortunately I have to be careful with whole seeds, nuts etc d/t diverticulitis risks but am going to make the sauce with the sesame seeds and then strain them out or maybe just use some tahini or sesame oil. Also, I've been saving the bones from the pieces of pork shoulder I've been using for the char siu with the intention of making broth from them, now I'm glad I saved them!!!. Just watched a few of your videos and they are informative and entertaining - love the humorous little"asides" AND Pailin is very lovely.

I am living for this recipe. I went to visit the fam one summer when I was really young and had this and Moo Krob over rice for at least two meals a day. When I came back to the States at the end of summer, my mom took one look at me, turned to my aunt, and said, "What the hell did you do to my son?!" I had gained 15 pounds. And my current and 10 year old self have NO regrets. :-D

One thing i do is make moo krob with this dish. When boiling the pork belly i automatically get pork stock to make the gravy with. I buy the pork belly with some bones still attached, cut those off and leave them in the stock for xtra flavor when the rest comes out for drying... the combo is my favorite street food!

Garlic powder is not "if you're lazy," it's a very different flavor. Use whichever gets you to the finished taste you're looking for. It really is a separate ingredient. No disrespect intended... just sharing for others. Thank-you for this recipe! 👏 Will try it out soon!
