a bit of nostalgia for me. Born in HK...moved away before 97. The one thing i can't get nor replicate...is the dried salted fish. None of the steaming...deep fried!! Goes nicely with a bowl of steamed white rice

Those two sauces that were poured onto the roast pork at the 4:05 mark definitely caught my eye. Particularly, that first brownish beige sauce or gravy. I can't recall if I'd ever seen that done here in the U.S. Apparently, there are a lot of "spices" or aromatics in it as the owner said in his voiceover narration at that point. That second sauce, which is something like a sticky sweet soy sauce, although fairly light in color here, is a more common finishing sauce on roast pork in the U.S. based on my experience over the years. Very interesting.

I would eat it without the sauce. You want to taste the roasting quality on its own.

they prob won't give out their secrets for that specific sauce but almost all of these places will give you "duck juice" (not the plum sauce) and "charsiu juice", which are their respective braising liquids, upon request. just ask for both on the side and you can pour as needed, otherwise they dump it directly on top, which if you ordered the 2 or 3 delicacies plate, will make the rice soggy in minutes.

As an Asian dude bulking on a weightlifting routine, I happen to live on top of a Siu Mei BBQ stand and eat BBQ pork & soy chicken almost daily. You can customize the leanness in the pork cuts, usually I go for lean if im trying to cut fat, but right now I’ll border “boon Fei Sau” (half meat half fat). Meanwhile all my non Chinese friends are choking on their dry ass chicken breast & broccoli rice meals lol
