This my friends is how "ramen" or "pulled noodles" is really made. I'm surprised in Japan they don't really have this traditional technique. They make ramen the way they make soba, but just folding it in a pile and cutting out individual noodles.

Thousand Word Moments ^^^ that is not true at all. The Japanese use alkaline Kansui water in their ramen-noodles. That is why they are yellow and kinky. There are 8+ different varieties in Japan.

I think they use a extruder in Japan to make Ramen. But I know that cuts soba with a knife.

I can tell you these kind of noodles are the best. Nothing like hand made noodles for lo mein and other dishes. I actually get my noodles imported from China.

Flour, water and salt. Salt is the most important because it helps align gluten and make it much more flexible

not a master, there is no such thing as a noodle master. when i was living in China. my neighbor owned a noodle shop. there was a jeweler on the curb. one day, the jeweler gave up his ring making business and started working at the noodle shop. in less than a week, he was pulling noodles faster than the guy in this video

I don't think it just depends on how fast someone can do it, it has to do with how well they prep it, how well they cooked and the flavor of the noodles, what you said just sounds ignorant.

I've seen guys do it faster, but regardless of the speed of the technique, the moves still have to be incredibly clean to do this properly. I know that I can't do it at all.

noodles made that way must be very elastic and good... there are more methods to make nodles... but, this method will guarantee the elasticity.... hmmm im hungry

And this, ladies and gentlemen, is where "Ramen" comes from. This is La-mien or 'pulling noodles'. Japanese is based off Chinese but they can't pronounce "L" and so it became "Ramen".

Udon is easier to make, the last time i tried hand pulled noodles i ate large chunks of supposedly noodle strands 😂 they stick together too easily

I tried pulling noodles for the first time. Img my dough was so hard and it was crumbling. And i added more water and it was just no it was so tough. I wish there was a proper noodle pulling tutorial out there.
