Best to use over night rice, Always wash the rice and rinse it before boiling, this could take up to 5 times You need to get all the starch out of it. and the trick is take it out once boiled say 3/4 cooked before the rice fluffs up or it will stick to the wok A chinese resturant owner told me this 25 years ago about this trick.

This was my favorite in the UK with honey bbq ribs and Cantonese style sweet n sour chicken. I've since left the UK and now where I live, I can't find a decent take-away so have to cook my own

Hi shawn, yup and its really a preference, you can use either one, but I know Gambo usually prefers oyster sauce. Sugar or msg wasn't added.

if you cook everything and take it out of the pan, then add the rice and the dark soy it absorbs into the rice. then add back in your veg eggs and meats, it keeps the eggs yellow the chicken white and the scallions green.

You use surprisingly small amounts of salt. I made Schezuan chicken and had to add salt quite a lot so it became tasty dish. Thanks.

rinse the uncooked rice with cold water until the water comes away clear and that should cut down the excess starch.
