These Chinese Water Chestnut Cakes 馬蹄糕 are so light & refreshing! They're not overly sweet and have a fun jelly-like texture with crispy bits of fresh water chestnuts 🌰. If you're looking for a treat that's lightly sweet and pure, this is the recipe for you!
Ingredients:
- Fresh water chestnuts - 365g (roughly 16, I would recommend buying extra in case some are too old, you'll know if the inside is yellow-ish)
- Water chestnut starch - (200g or 1 cup + 1 tbsp) - amzn.to/3nOLhNw
- Brown sugar slabs - 2 sticks
- Water - 5 cups or 1200 ml
- Rock sugar 20g or 1/4 cup of granulated white sugar
- neutral oil to brush the steaming pan i.e. vegetable or corn oil
