Ingredients:
1 flax egg (1 tbsp flax meal + 2 tbsp water combined)
1 cup mashed ripe banana (roughly 2 bananas)
1/2 cup rapadura or coconut sugar, sifted
125ml (1/2 cup) almond milk or any plant-based milk
1 cup buckwheat flour
1/4 cup vegan vanilla protein powder
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup vegan chocolate chips
1. Preheat oven to 180°C fan-forced and line a muffin pan with nine muffin liners.
2. In a large mixing bowl whisk together the flax egg, banana, sugar and milk. Then sift in the buckwheat flour, protein powder, baking powder, baking soda and salt. Combine well and fold through the chocolate chips.
3. Transfer mixture to the prepared muffin liners, filling a little more than three-quarters full. Bake for 20 minutes, until a toothpick inserted into centre of the muffin comes out clean. Allow to cool for 10 minutes and enjoy.
