Ok, so my niece is making her first loaf of bread and decided she wants brioche or Parker house recipe. I sent, my Nonnie, the link for your recipe for brioche because I know she will get excellent instruction and a great finished loaf. She is very excited! It’s really cold today so she is staying in. I, her mom, her teenage son, Jayden, and her sister Chanel are all waiting for her step by step pics until the finish of her first loaf of bread. we cannot wait! Thank you Stephanie. I made these yesterday. just plain brioche no chocolate added :) I had to kneed by hand it took around 30 minutes, left me with sore arms, but its worth it :D . I didn't believe my eyes when they came out of the oven, or the taste AMAZING!! I think I'm repeating myself when I say you are the BEST, but I'm really grateful. Your recipes are awesome. I just tried your brioche but I had to modify it. I use white chocolate because I don’t have milk or semisweet chocolate. I use powder sugar instead rock sugar. It came out pretty good. Love all your recipes.

Hi Step I made your Almond Brioche Toast a while ago and they were delicious so this one I will make it but better to wait because now in Italy is a winter time I find it hard to rise the dough! Love your videos always ❤️🇮🇹

You can put your dough in the oven with the oven light on if your kitchen is cold. The light is just enough to keep the oven warm. Just be careful it doesn't get to hot with the light on. If it does you may need to open the door a bit.

Thank you for your excellent recipes and videos--you are a wonderful support for so many of us. I have a few questions about modifying this recipe. 1. I would like to eliminate the chocolate and substitute plump raisins. At what point would you integrate the raisins? For example, during the long kneading or folding them in once kneading is complete? 2. I prefer a braided presentation (4 or 6-strand). I would likely bake this free-form on a preheated baking stone. Would this dough require the support of a pan, or would a free-form presentation work well?

Pearl sugar is also known as nib sugar. Not the same as crystal sugar. As you saw, the pearls are coarse, large, hard, and opaque white. It is made by compressing sugar crystals to form larger particles that won't dissolve when baked.

Yes Baxter turned 10 on January 2. We were worried for awhile he wouldn't make it. He was sick for quite a few months, but our vet figured out the problem and he's as bouncy as ever.

I'm a little confused. In some of your recipes, you say one large egg weighs 50g without the shell. Why is it different in this recipe?

I think I misspoke and said that 5 eggs are 240 g. It should have been 250 g. Eggs do vary though and 50 is only the approximate weight of a large egg.

Like a you say-i bake challenge. :) INGREDIENTS -Dough 200 ml milk 260 g of wheat flour 25 g yeast 160 g wheat flour 1 egg 2 g of salt (0.5 tsp) 5 g ground cardamom (1 tbsp) 100 g butter, room temperature 85 g granulated sugar (1 cup) -Paste 500 g of almond paste 50 g of almond flour 50 g chopped almond 5 g cardamom (1 tbsp) 20 g vanilla extract (2.5 tbsp) 90 g icing sugar 150 ml milk -Serving 1 l heavy cream icing sugar INSTRUCTIONS THE DOUGH 1. Heat the milk to luke warm. Then mix it with wheat flour and yeast and drive it in a food processor on the medium speed until it uniform mix, let the mix rest for about 15 minutes. 2. Mix in remaining ingredients in the previous-mix and run for a minute at low speed then slightly faster for about 7 minutes until the dough has become glossy and feels elastic. 3. Divide the dough into 14 equal pieces, about 60 g / pcs. Round the pieces into buns with your hands and lay on the plate with baking paper. Allow to rise under duvet to double size for about 1.30-2 hours. 4. Bake in the middle of the oven at 210 degrees for about 8-10 minutes, until the bun has a nice golden brown color. THE PASTE 5. Mix all the ingredients in addition to the milk into a pulp, then mix in the milk a little at a time and mix well until you have a fine almond paste. Put the paste in a piping bag. 6. When the buns have cool down, cut a triangle on the top of the bun and lift off the lid. Remove some of the bread inside. Then fill with almond paste by piping. THE SERVING 7. Whisk the heavy cream to soft peaks and fill a piping bag with star-shaped pipe. Pipe the heavy cream on top of the almond paste, around and put the triangle lid. Garnish with icing sugar and serve!

I have used stand mixers with 6, 8 or even 10 speeds. No matter the mixer, I put it on 2nd speed for that mixer.
