Hurray! Finally a good vid on brioche! I learned via America’s Test Kitchen… and they highly advise to chill your dough! So often I’ve watched people have a huge fail because they don’t let the dough rest and ferment in the cold. It’s amazing the sort of results you get that way.

Thank you very much for the wonderfully easy to follow recipe. I made it for the first time a couple of months ago and accidentally over proofed the rolls, but they still tasted good. This time I made the dough and refrigerated it for a week, but followed the rest of the process correctly. The dough is just yummy. I also used a prickly pear concoction instead of the berries and the result was super delicious. Thanks again!

Love a good brioche! I also start out w/my paddle attachment. The dough hook just doesn’t break up/blend in the eggs very well. I’d always wondered the difference between gold & red yeast. Thanks to you I finally know! This recipe looks delicious! The dough doesn’t seem as complicated as some brioche recipes can be. It’s a good recipe for folks to try during the holidays when they’ve got time off work & need a special treat anyway. There’s just something so relaxing, so “cozy” about baking on fall/winter holiday vacation days 😋. Especially when making homemade bread. Ah, the wonderful scent! Thanks again for an awesome recipe we can all achieve!

Hello Stephanie, I love making bread and I really want to try this recipe out. However, I always have problem with my homemade bread hardens fairly quickly, like the next day. Is that normal or am I doing something wrong :(

Without the preservatives of commercial bread, homemade bread will not last as long. Keep it in a plastic bag or freeze it if you want to keep it fresh.

I tried making half of this dough because I have a smaller stand mixer, but simply halving the quantities of the ingredients didn't seem to work very well: the dough was sort of wet/sticky even after a lot of beating, and I had to add quite a bit more flour... do you have any suggestions when you need to halve the dough/ingredients? Is there a rule to follow? Thank you, I'm a new subscriber and your channel is lovely!

It should work if you halved every ingredient. The kneading time can vary depending on your mixer. A sticky dough usually means the dough has to be kneaded longer.
