Chocolate toast
450g toast mould*1
Recipe:
Bread flour 250g
Cocoa power15g
Sugar 50g
Salt 3g
Milk power20g
Egg*1
Milk130g
Instant yeast 4g
Unsalted butter 35g
chocolate chips 30g
160°C (or320°F)
Middle-low of oven 40 ~45minutes
(Cover with aluminium foil after baking for 15 minutes)
Tips:
When you put the bread roll into the toast mold, please make its edge of rolling face the bottom of the mold.

牛奶130克
即发干酵母4克
黄油35克
耐高温巧克力豆30克
160°C 烤箱
中下层 40分钟
(烤15分钟后盖锡箔纸)
Tips:
放面包面团卷进入模具时,请把收口朝下压住。

Hoy hice este pan. No usé chocolate chips pero agregué 1 cucharadita de café espresso en polvo y 1/2 cucharadita de canela. Quedó maravilloso, muchas gracias ^u^

Thank you for share this recipe. I'd like to know if I can substitute the egg (50g) for additional 50g of milk, of if I can simply remove the egg without prejudice the recipe. Thank you in advance

I would like to try your this recipe, but want to try your sponge Dough method, may I know how can I convert this recipe ? How much flour should I take out to prepare to the sponge dough ? In your 2nd time rolling, what is the length and width of dough I shld rolled to ?

失败😔,用面包机打,出来的面包团不成团,又湿又粘手,可能我用的chocolate chip融化了。造成这种问题。是不是?

老師好,請問要製作起司吐司的話,可以使用這個配方然後將巧克力豆的部分換成耐高溫起司塊嗎? 另外沒有麵包機的話,用手揉也可以嗎?

您好,可以換做耐高溫起司塊的,份量不要太重避免壓到麵團影響發酵。 這個麵團可以用手揉的,因為液體量比較大,如果手揉操作太濕可以多加10~20克麵粉。(先看麵團狀態後再決定)

Do you spread some oil or butter in the toast box to prevent the bread sticking to mold?

Hello, my mold has better anti-stick performance, so I didn't put butter in the mold. I used to use a mold that was not very anti-stick. When I used that mold, I would put a layer of butter on the inside of the mold. 🥰💖

May i know what brand bread flour you are using ? What is the protein level you used?

Hello, 🥰💖the protein content of the bread flour I use is 12.8-13.8%. I buy it from a local baking supermarket in Thailand. The brand is “Cotton Farm”

您好,如果您沒有奶粉,可以減5克的牛奶含量,味道區別很小。 另外每個品牌的麵粉吸水率不同,您可以在配方含量上根據您的麵粉吸水率稍作調整+-10~20克左右。 整體這個配方含水量比較高,(因為追求的吐司柔軟),您在整理麵團時可以面板塗抹一些油,手上也抹一點油防粘。 總體成品味道非常好,值得嘗試。

你好,可以用水合法,留15克牛奶溶化酵母后放,这个面团很柔软,水合法也非常适合呢。

您好,巧克力的會發酵速度慢一些,發酵時間可能需要多10分鐘左右。我當天室溫大約30°C,第一次基礎發酵大約60~65分鐘,整形完成後大約發酵60分鐘。

不確定您的室溫和面溫,還同時可能考慮一下您酵母的活性。一般情況下酵母最好密封後保存在冰箱冷凍或者冷藏,這樣能最大程度上保存開封過的酵母活性。🥰💖
