There is a huge problem with your recipe.... It only made like eight muffins in my batch...... Because I ended up licking most of it up before it even made the muffin pan....hehehe... Fantastic recipe thank you and keep up the good work!!!!!!

Dani, we love the zucchini juice! I juice the overgrown ones in our garden. We add a little lemon or lime juice, a pinch of pink sea salt and a dash of cayenne. It makes a refreshing tonic! And, thank you for an awesome recipe!

These were so so delicious! I do want to point out for those of us that are on a lectin free diet, that this recipe works very well deseeding and peeling the zucchini first before shredding it. It does have much less liquid this way as well, but still needs to be squeezed out with a towel, and I added a tablespoon of Avocado oil to make up for the moisture loss. I also used Monk Fruit in place of the coconut sugar, and included chopped pecans on top with the dark chocolate nibs. Super good recipe I will make over and over for my family. Thank you Dani!

100% agreed about the greater quality of pasture eggs. I'm always baking at least once a week if I can. When my family used to have chickens roaming loose in our fenced backyard and horse pasture, I'd have fun collecting the eggs from their boxes (and hunting down the rest LOL) and use *both* store bought as well as free range, just to see the difference. WOW.

I just made these and I am impressed by their texture. They rose in the oven and are spongy (not many healthy desserts feel exactly as their originals- full fat, sugary versions). They definitely need more sugar though. I added 1/4 cup of stevia on top of the 1/4 cup of the coconut sugar on the recipe, and I still think it needs an extra 1/4 cup, but the chocolate chips really help with that. Thank you. I have allergy against not only wheat but rye, barley and oats. Research has shown that more than gluten affects immunsystem, if you have the allergy. Research did show cross reactions between grass pollen, wheat, citrus fruits and kiwi. Since wheat and the others are like grasses it stands to reason.

I made these tonight. The texture was really great. I am prediabetic, so I subbed sweetener for the coconut sugar in equal amounts. I didn't think they were sweet enough. I will definitely make them again, but I will add more sweetener, probably equivalent to a cup. Thanks for the grain free recipes as I can't eat grains anymore.

These are AMAZING!!!! I've made them two weeks in a row and I'm obsessed and floored that it's mostly made from Almond Butter....who would have thought. It's given me so many more ideas of ways I can replace flour with nut butters. I prefer baking egg whites and just add 2 1/4 cups of egg whites to substitute the egg requirement. I also add in few chopped walnuts (approx 1/3 cup) (pecans might be yummy too) and instead of the chocolate chips, I chop some baking chocolate (73 percent, about 1/3 cup as well) and add it in so there are chocolate patches throughout. But this is amazing overall. Thanks Dani!

I make these too!! and I throw in a ripe banana or two, I use organic raw honey instead of coconut sugar, and a couple of tbsp's of ground flaxseed ..... and I just make my own almond butter using a food processor- very easy to make also! Great recipe and thanks for sharing a healthy version ! 😊

Wow these muffins came out great! Just like the picture and they baked in the exact time the recipe said! The texture was chewy and delicious. I used heavy cream and a different sugar substitute which they didn’t come out sweet enough but we’re still yummy! 😋

I am going to make these one day, but just wanted to say this recipe is a perfect base for tweaking. I swapped the zucchini for bananas and added cinnamon and nutmeg instead of cocoa. Everything else was the same as this recipe. The end result were delicious, moist cupcakes! Can't wait to try it with the zucchini and cocoa though! Also, since almond butter can be expensive, I want to try this recipe with a mix of half cup of almond butter and half cup of strained plain yogurt. When I try I will let you know how they turn out!

my, my, these were scrupdeleeeeishous!!!!!! super moist and really good flavor. (and i put the zucchini juice in my regular daily green juice, a slightly modified recipe from lisa at downshiftology, in place of another green veg) truly yummmmm...i only made a couple of slight substitutions, i used raw sugar instead of coconut sugar and coconut milk instead of the almond. will be a regular at my house! thank you, dani! 💕

The types of food I can eat are very restricted (otherwise I end up in a hospital) and I miss these kind of decadent foods and pastries, because the traditional ones are usually full of dairy and gluten. I am allergic to Casein too!!! I haven’t met anyone else who is! When I tell people I can’t have dairy they always assume I am lactose intolerant and that i Can still eat some dairy! And i always have to explain that i can’t have ANY dairy! Hahaha

I can't have dairy or gluten so I substitute gluten free flour for the normal one and nuttelex or a no dairy margarine for the butter, soy or almond milk for the milk and then I can just follow the recipe as written. I'm in Australia so there are plain and self raising otherwise there are coconut, chickpea, lentil etc etc. Depending on what I am making depends on what combos of the different flours I use and if I am using one of my non traditional flours I add bicarbonate of soda to it to help it rise. Have used this successfully for a few different cake/muffin recipes.

I didnt have any kind of butter, but I really wanted this recipe for my Bday cake. What I changed: I used 1 cup of Almond flour; 1 tbsp apple cider vinager & ½ tbsp baking soda, instead of baking powder; 1 cup of Stevia; I didn't squeeze the zucchini but also didn't add any liquid. Mixed all the ingredients using a food processor. Made mini muffins and they turned out cute and yummy 🥰

I used sunbutter instead of almond butter and regular milk instead of almond milk (peanut allergy), used half a large zucchini from our garden (it made more than a cup) and I made it as mini muffins instead of big muffins to increase the amount and holy moly these were the best. muffins. EVER. DEFINATELY using this recipe again!!

My variation uses sweet cranberries, pineapple instead of apple, whole wheat flour for a denser muffin, brown sugar and some maple syrup, sunflower seeds and chopped walnut instead of pecans. Also add half tsp of ground ginger. I use 380 F degrees for 18-20 mins. I prefer to eat them cold from the fridge. Awesome.

I use a stainless steel pan with unbleached liners so as not to the aluminum and non stick chemicals. Also have made zucchini breads and cakes for years and never squeezed out the liquid.

I would use the zucchini juice for mixing with other fruits as the juice also has health benefits.

Im big on chocolate. Like the looks of these too! An idea of putting drief cherries in the mix sounds like it may be good too. Kind of like chocolate coveref cherry muffins. Thanks for sharing your recipes. I💕🤗
