I'm so sorry to hear about Jack's passing. He was probably the first cook I began watching consistently enough to inspire me to step up my cooking game and to keep learning. There's something about his videos that were unique and that I haven't felt watching any other cooking channels. I also liked that he wouldn't just talk food all the time and every now and then he'd share some life advice unrelated to food and cooking. He seemed like a really awesome person watching his material, I sure wish i could have met him and tried his restaurant. RIP

Hey Jack, always love the perfect blend of your home style cooking with a gourmet twist. Perfect blend for me. And always leaves room to dress these dishes to suite my own creativity. Going back a ways, just got done cooking up and savoring your lemon chicken dish. So simple and so special. i added a bit of fresh garlic and Thyme. Just makes my evening. Just heard about the passing of this special man- he loved people more than he loved food and cooking which was his passion. Generous, caring , giving, passionate, genuine- I’ve watched his videos for many years and acquired a true love of cooking besides a love for this down to earth , real person. Although he passed much too soon, his family was fortunate to have him the years that they did. He should continue to care for them from his abode on high. RIP.

That's how I make my etoufee, I saute the vegetables up in oil and once softened add flour to them, mix, and then water., then the seasonings, and lastly the shrimp, crawfish, or pork chops, Looks and tastes just like one made with the classic roux but much faster and no lumps in the gravy.
