Christmas Pudding & Brandy Imperial Stout | Barrel Ageing Homebrew

We pioneered the Three Pumpkin Mash and with the arrival of Christmas Brew Bros are proud to introduce the Seven Pudding Stout! Just a bit of fun, this imperial stout brew day involved four puddings in the boil and two in the fermenter to extract the Christmas pudding flavour. Then it was racked to a 10L oak barrel which had been prepared with brandy for 1-2 months conditioning. It's 50/50 whether this brew will turn out well!

-Grain Bill:
Maris Otter Pale 4kg
Munich 500g
Crystal 320g
Carahell 320g
Flaked Barley 320g
Chocolate 200g
Flaked Malted Oats 200g
Midnight Wheat Malt 200g
Roasted Barley 160g
-Mash:
Strike water 17L at 75°C
60 minutes at 68°C
10 minute mash out at 75°C
Sparge 5L at 75°C
-Boil:
Pre-boil volume 18L
60 minutes
Chinook 40g @ 60 mins
Christmas Pudding 200g @ 60 mins
Christmas Pudding 800g @ 20 mins
Cascade 60g @ 1 min
-Yeast:
SafAle S-04 English Ale 330 billion cells (23g)
-Ageing:
1-2 months in oak barrel which stored brandy for a month and was sanitised prior to use by sitting with water 80°C plus for 30 mins

This sounds like my kind of beer... but I was surprised to see that you included the puddings via the boil, rather than the mash.

Good timing, it’s been barrel ageing for 3 months and we’ll be kegging in a few days and doing a tasting vid in a couple of weeks. We think it might turn out quite well. We also slapped two puddings in the fermenter 👌 Was a bit of fun really…
