Why not cook your Christmas turkey outdoors on your BBQ, it frees up oven space and being outside it draws in the moist air so helping, what can become a dry meat, remain nice and juicy. Using the Weber iGrill can enable you to keep an eye on the temperature without constantly going outside to check, it lets your smartphone know when the turkey is 5C off the magic temperature of 75C. Season the cavity with fresh ground black pepper and sea salt then add apples, onions and lemons, cut into chunks, and some fresh thyme and rosemary. Season the crown and legs then cover in strips of streaky bacon. Part way through the roast remove the bacon to allow the skin to go nice and crisp, use the bacon for the most delicious bacon sandwiches. Let the turkey come up to room temperature before cooking as it cooks more evenly and also quicker. Place a sheet of tinfoil over the bacon to stop it sliding off the turkey. Pre-heat the BBQ to 175 - 180C with the 2 outside burners of the Weber Genesis II LX gas BBQ lit leaving an indirect cooking zone in the centre. Place a Weber foil drip pan onto the 2 unlit burners containing the ingredients for making the gravy; roughly chopped celery, apple, carrots and onion with a little water and the giblets minus the liver which can make the gravy bitter. Replace the cooking grate and place the turkey directly onto the grate over the tray of vegetables, the juice and fat dripping from the turkey will add to the lovely flavour. Place the probes of the iGrill into the deepest part of the bird and close the lid. Position the BBQ so you can the the thermometer of the BBQ from the house so you can have a quick check now and again. Once the turkey reaches temperature let it rest for 1 - 1.5 hours on a wooden board in a warm spot while you are cooking other elements of the Christmas dinner. Cover with 2 - 3 sheets of tinfoil and a couple of thick tea-towels to retain the heat.
