I worked at chipotle and all they used was plain steamed rice, a bit of salt, oil, lime juice, and some chopped cilantro tossed together in a bowl. I prefer your recipe personally

This is better than theirs. More flavorful. Thanks for the comment. Molly sad “ you know theirs isn’t green right?” I said thats because I used the pesto.

We don’t have a chipotle near us so I’ve never tried their food but this looks amazing! Leftover cilantro pesto with a teeny bit of horseradish mixed in is excellent spread on some crusty ciabatta roll with some roast beef!

Please watch until the end where it is all explained. You should not adjust the amounts I gave it will all work out.

I watched the end again. I determined that the pesto is made as stated, and then added to taste... and for as much cilantro as you like, there will be an adequate amount of lime to accompany it. I don't sit in the cheering section for too much cilantro either.😊

Why would you want to use a mix? I don't know whats in that. I prefer to make things from scratch with fresh ingredients.
