I make a variation of this dish regularly. I cook the chorizo first and then remove it so you can fry the onion and garlic in the chorizo oil. Add the pimenton and potato before adding water just as Albert does. Leave for 20 minutes and then put the chorizo back in with a load of chopped up, spoon sized, dark cabbage like a Savoy. Cook until the cabbage is done and then break up the potato with a masher to thicken it but still have chunky bits. I'm sure it's nice with the pepper but I think the cabbage gives it a warmer, more earthy and traditional element.

@@v.b.l.6498 Hi Victor, give it a go, I can assure you it tastes very rustic Spanish. The chorizo takes care of that. One final thing which I forgot to mention is a dollop of olive oil on top before serving. It's a classic peasant dish which can be modified a number of ways. I've done it with alubias (Spanish beans) instead of potato but I think the potato comes out on top.

@@merk9569 I haven't used spinach but I have tried a variety of greens such as cavolo nero and chard. The cabbage works best because it maintains texture and flavour. You would have to use a huge amount of spinach but it will wilt and lose that bit of crunch. At the end of the day this is a dish open to quite a lot of personal touches without any hard or fast rules. You could substitute the potato with Spanish white beans (good but not as good as the potato imo).

I added a can of drained garbanzos (chick peas). It came out great. Next time I will add a can of drained cannellini beans & a little spinach. I did sauté the chorizo first in the olive oil. It was better the next day.

I have made this twice this week. It is so delicious. My husband said it was the perfect stew. Granted, I didn't have Spanish chorizo. I did Mexian chorizo. I sauteed the veggies for bit, then added the Mexican chorizo (about 2 tbsp) and mixed it with the veggies. I let that all cook together. I only had turkey smoked sausage, so I added that to the veggies and potatoes. The Kiva Paprika is so good. This will be a regular go to recipe!

Just tried this recipe today and it was just delicious and wholesome! I only had a red bell pepper on hand but I actually liked the touch of sweetness it added to the dish. This has been one of my favorite meals since I came across a similar recipe a few years ago. The recipe I use doesn't have the green pepper, suggests peeling the chorizo and using it larger chunks before cooking, and breaking the potatoes into chunks using a solid fork or knife so that the edges are not smooth (this makes the liquid part starchier, mashing a few chunks and mixing them in has a similar effect). As others have mentioned it is not a fancy dish, so don't worry about varying the recipe. But it is really delicious if you keep it simple.

Look for a global imports type store and if one is not available Amazon has Goya Chorizo (Im guessing you are in the USA). I believe they have 3 types, one is Espana, one Mexico and I think one South America (bought all 3 several years ago).

@@emmel4fun Yup. If any of my stews are too thin, I just add a little bit of instant potatoes to it until it's to the consistency I want. Plus it adds more flavor rather than adding a rue to it. I made a variant of this. The one with chickpeas, and potatoes, and chorizo. It was hasty and I would have done it in another way. It still turned out great. Added both paprika and saffron. Was a bit too spicy since I ate it directly. Stews are usually tastier when you reheat them. So I'll see tomorrow.

I like mine with more pimentón jajaja. My grandmother use to make this for us when she use to come visit us here in the U.S. Sometimes when we had friends over and there wasn't enough potatoes for everyone she would also add pre-made fava beans or lentils depending on what was on hand.

I could only find Mexican Chorizo (Fresh) at my local supermarket here in the US, so it was slightly different but still very good, spicy and warming. Now that I realize Safeway has Spanish Style (cured) Chorizo (Boarshead) I will have to try again with the traditional Chorizo.

First off… the way that the potatoes are prepared is specific to this dish. You make a small cut and crack them so that they are in thumb sized pieces on naturally occurring splits. This allows the starchiness to infuse into the stew and makes it easier to smash in the serving by the individual person.

Does adding cold water stop the cooking process? I've been taught to always add hot water. Either way, this recipe looks so delicious, thanks for showing it.

He added the cold water at the beginning when sautéing not during the cooking process

My chorizo from Spain is not plant based. I cannot quite imagine what plant based chorizo would taste like. I use Palacios or Fermin

@@Blondie2.0 At the Whole Foods store. They have tons of plant based foods at all of the stores around here now. Amen. There's plant based meats I like better than animal meat. I just can't give that up completely though.😉 Have an awesome day my friend.💕🌸💕✝️

Absolutely positively the recipe I need! Please sir, could you point me the direction where to find plant based chorizo? I am locates in southern part of Comunidad Valenciana, quite close to Murcia. Ever since I gave up meat and other animal based products, chorizo have been one thing I still think about. Thank you for your work on this channel!

Alberto, I know this not a new video, but it just pupped up! I love your recipes and also that you do not use meat!!! But where do you buy that chorizo? I can buy it from “De vegetarische slager”, but only in thin slices. (It was a dutch company but it is sold to Unilever) can you help me? I once asked you where you bought orzo, you told me at the Aldi, but here in Benissa/Moraira they did not have it. Luckily we found it in Moraira in e big local store that has a wide international range. (Pepe la Sal) Hope to hear from you, gracias de antemano!

I buy the plant based chorizo from a store in Valencia called Navarro, but you can get it online from veggieroom, they are located in Madrid :) Much love
