Made it last night but did add pumpkin pie spice. It was a huge hit!!!! Even my friend who hates pumpkin pie love it because it’s light but still creamy. Also it’s not jarringly sweet. Very fragrant, I can even smell it in the hallways of my apt. I’ve been asked to make this again!!! Pumpkin pie elevated!

Very excited about this recipe. The smell of coconut and pandan is incredible. We are lucky in Atlanta to have access to a lot of different Asian ingredients. One market had fresh pandan leaves and Aroy-D coconut milk in a carton. A Thai store had good palm sugar and frozen shredded coconut (very wet as it appeared to be frozen after scraping the coconut - tasty). If you are lazy like me and use a frozen pie crust be sure to get a deep dish. For my second pie I only used 1 cup of palm sugar which was my amount from an old recipe. That is personal preference as I like the taste of pumpkin and eggs to shine. Next time i will use fresh pie pumpkin as I have done in previous recipes. When I get a great recipe like this one I love to experiment with it. Since I had the pandan leaves I made pandan-infused simple syrup to make a pandan Old Fashioned. This is a drink at an upscale Thai restaurant in Atlanta called Chai Yo Modern Thai. Fantastic restaurant and I highly recommend Pailin visit it for a video. The chef, like Pailin, is a very beautiful and talented Thai girl. Signature dish: Neau Panang - Sous vide 12 hours braised beef cheeks in Panang curry, green beans, and bell peppers, served with jasmine rice. www.chaiyoatl.com/ My wife and I love to watch this channel. We finally tried this. We skipped the coconut flakes and added pumpkin spice and it was easily the best pumpkin ever. There isn’t even a close second. Amazing!

I love pumpkin pie, I always made it for Thanksgiving. Now I am going to try your version. I just scooped up 2 packs of pandan leaves from the freezer section of my grocery store. I made this pie for this year Thanksgiving and it is the best pumpkin pie to my opinion. I usually not too fond of pumpkin pie but I can eat this any time. I also made the other one with white chocolate; the spices are overwhelming. Thank you for sharing.

I love pumpkin pie and I was wary about this one appealing to everyone...should never doubt Pailin! This Thai pumpkin pie is delicious! I also made her super easy pie crust and yes, you must blind bake the crust. It elevates the pie big time. This pie is custardy and each bite feels warm and comforting...full of flavor but not overwhelming...just a hint of pandan. If you love pandan, add more though. Thank you, Pai! ❤️

Mmm, pumpkin and coconut. I've put those two together before, but I hadn't used pandan. I'll have to try that, though resisting the urge to add cinnamon, cardamom, cloves, allspice, ginger, and nutmeg will be hard. In my family, we love a lot of spice in our pumpkin pies. Thanks for the idea!

Great! That crust isn't supposed to be fluffy or flaky, you'd want to search for a "flaky pie crust" recipe in that case. Glad you like the filling!

Like you, I don't like pumpkin pie very much, but the hubby does. So we have to have this type of pie at Thanksgiving. Luckily, you shared this just in time. My family loved it! (I was going to make the one with the white chocolate but opted for this one this year.) The coconut complemented the taste of the pumpkin very well. It would have been even yummier but I couldn't find pandan where I live so I had to make it without this ingredient. I can't wait to make it again. Probably the first time I am eager to make this pie even if it's not Thanksgiving. One step I added is to cook down the canned pumpkin for a few minutes. The pumpkin came out creamier and less watery. Oh, and I used your pate brisee for the crust. A winning combination!

I made a similar pie like yours with coconut cream, palm sugar, eggs and canned pumpkin it was OK but not that great. Then later on I tried again but this time I used mashed roasted buttercup squash (Kabocha) it turned out nuttier and creamier than using canned pumpkin.

We have bingka in malaysia where the base is coconut milk + eggs and it comes with variety of flavours too, depends on what fruits/leaves/potatoes(?) that you put inside 😋😋

The pie is two hours out of the oven and we couldn't wait for our (US) Thanksgiving. I love this pie. I was afraid the flavor would be too subtle to appreciate but I was wrong. It is sooo good. I used frozen pandan leaves (I used two) and I used a traditional crust recipe with half butter/half unrefined cold pressed coconut oil, thinking I wanted more coconut flavor. I should have used your crust recipe as the star of this dish flavor-wise is the filling. I knew it was going to be special when I tasted the filling before adding the eggs. You've already cut down on my free time with my wife's demands for your Lo Bak Goh (I make 3x to 4x your recipe each time). This pie is going to become another family favorite.

@@emalinel It was sweet. Fried shallots are traditional in the khanom morgaeng she mentioned this dish being inspired by. I would even say it's essential to the flavor. I thought about including crushed pepitas too sort of like crushed peanuts on pad Thai. I have also made a sweet "green bean casserole" cheesecake using shiitake and candy cap infused cheesecake, and topped with vacuum fried green beans (I discovered vacuum fried green beans are so naturally sweet, people think it's candied) and fried shallots.

Looks delicious! Did you put coconut cream or coconut milk? From the video it looks like coconut cream because of its thick texture vs coconut milk.

Hi Tabitha! I asked Pai this and she said "Maybe you can try to set it with agar agar - no baking needed." ... which is a cool idea :) Have you used agar agar before? (like gelatin but is vegan and is a solid at room temp) If not, the texture takes some getting used to :) (like crunchy gelatin), but if you want to give it a try, some of her recipes are here hot-thai-kitchen.com/?s=agar+agar Cheers and have fun!
