I’m with you Tom. I think cook once and eat 3-4 times. I may fix a couple of other meals but if I cook a pot of chili or veggie soup we eat on eat for 2-3 days then I’ll cook a fresh meal then more chili, I’m not wasting food. And this meal looks fantastic and honestly I might put ham on top of all of that but if I didn’t have ham I’d just leave it meatless. Thank you for sharing. My Mama used to boil the turkey carcass and made a delicious bone broth. Then she used that broth to make a gumbo and man was it good! Today I toasted light bread and made a sandwich with cranberry sauce, smoked Turkey breast and cornbread dressing! It was a thick sandwich. I heated everything except the cranberry sauce. It was cold but I wanted it that way. Y’all should try it. Delicious. My son bought that turkey breast from a local bbq place that does a fantastic job. This casserole looks really good, Tom! Great idea!

I love leftover Thanksgiving casserole and I do this every year! Didn't have mashed potatoes or the veg leftover, but I did have gravy, turkey, stuffing, jalapeno mac & cheese, and sweet potato casserole. Just layered it and put it in the oven 10 minutes ago. I'm going to have the cranberry sauce on the side. SO YUMMY!!!

I cooked a big Thanksgiving dinner yesterday for myself and my guests. I made everything from scratch. One of my vegetables was a cauliflower au gratin. I honestly have only turkey and the cauliflower left over LOL This recipe of yours looks so good, I am inclined to peel a few potatoes to make a small batch of mashed potatoes and use some canned vegetables that I keep in the pantry and take a quick run to the grocery store at my corner for a box of stuffing mix and gravy just to try this recipe tonight. This is one of the very few years that I did not have leftovers here at home after packing up food for my guests to take home. Thank you for sharing this. It looks delicious! You are right about the dressing Tom. I totally agree with you. I don't know anybody that wants dry dressing! Looks yummy! For the first time I make corn casserole. We do a lot of casseroles at Thanksgiving that we have come to love. Lots of family but we want the standard green bean casserole and broccoli/rice and dressing muffins. There is hardly leftovers because several take a doggie bag. But any of the casseroles are great when turkey is added. I have receivemyyour cookbook and I love every page. I did the opposite. Dressing on the bottom and mashed potatoes on top. Threw cheddar on top of the potatoes a broiled them to a crisp layer, not whole layer just the top layer of potatoes. Two items always included were turnips, yuk, and yams, yuk, I didn't include those. We went crazy with potatoes here so there was always more enough for two more casseroles. With those I made potato pancakes and pierogies. Those are fun. But as family shrunk due to death or moving away. We cooked less. Lost 3 in the last 2 years my mother included.

You could make this on Thanksgiving Day as you're taking care of leftovers. No meal prep the following day(s) - freeze what you don't eat for later.

With the left-over corn, there can be corn fritters, corn pancakes. If there isn't enough or any dressing left over why not put the veg on the bottom and the mashed potatoes on the top? Browned mashed potatoes are ok.

I was thinking that the _Chicken Stuffing Casserole_ that you made last year would be perfect for leftovers. Just replace the stuffing that is normally made at thanksgiving for the stuffing called for in the original recipe; & replace the chicken with the turkey. In fact I made the original recipe that you made last year when my grandmother got out of the hospital and my aunt came into town to help us take care of her. My father loved it so much I gave him your recipe! The only problem I have is when the recipe is transcribed above it never says *how many* it’s supposed to feed. My mother is a big believer in cutting recipes down. But if you don’t know how many the original recipe serves that’s next to impossible to do. Plus it’s hard because of the size of the container of ingredients in the store.
