Recipe from Fox 11 Living With Amy
Casserole Recipe
Easy Casserole recipe
Ingredients:
12 to 16 oz Egg noodles, cooked
1/2 cup dry white wine or water
1 lb Lean ground beef
8 oz Cream cheese
1 cup onion, finely diced
1 cup cottage cheese
2 tsp garlic salt
2 cups sour cream
1/2 tsp black pepper
1/2 cup Parmesan cheese, grated
16 oz tomato sauce
1 to 2 cups garlic croutons, crushed
1 tsp dried Italian seasoning
3 Tbsp butter, cut in small pieces
1 tsp sugar
Directions:
Brown beef & onion in a large skillet. Drain grease. Season with salt & pepper. Stir in tomato sauce, Italian seasoning, sugar & wine (or water). Cook for a few mins. Remove from heat. In a bowl beat together cream cheese, cottage cheese & sour cream. Spoon 1/2 of the noodles into a 9 x 13" casserole that has been sprayed with cooking spray. Cover noodles with cheese mixture, then the rest of the noodles. Pour the meat mixture on top. Sprinkle with Parmesan cheese, croutons & then dot with butter. Bake in a preheated 350? oven 35 to 45 mins.

Melted butter in a pan with croutons mixed so that every crunch has Butter! Yay! Loved the Recipe!!❤😊

Amy is a charm! As soon as she began to speak I thought, hmmmm, not quite Minnesota or Upper Peninsula but definitely Michigan! As a fellow Michigander our voices are usually easy to identify. The casserole looks great. Can't wait to try it.

Looks delicious! HINT: A really flexible silicone spatula works great to scrape out filling from a bowl or dish--much quicker & efficient than a spoon! The bowl is much easier to clean too.

I made this recipe and it was good. I make a full recipe and then freeze what I have left over for meals throughout the week. I double bag and freeze small meals in regular baggies and it works pretty well.

I watch this all the time and have made this many times . It is a very hearty casserole that everyone enjoys. Serve with a green garden salad and bread or rolls can omit the bread for less carbs.

I have always salted my water before the pasta was in it for over 35 yrs and never had an issue,and everyone I have ever seen cook has done it and all the videos I've seen has done it. NO issues it wont ruin your pot!

I used to get nervous with guests coming. I would get cranky with my family for not being as stressed as I was. Lol. My husband and I sat down for a talk one night after one of my events was over. He said Kim, you are the only one who has expectations for perfect. The guests don’t know and the kids don’t know. You need to stop stressing because people don’t expect what you do. Promise me you’ll do it next time. HE WAS RIGHT! I simplified my life and expectations and everyone including me enjoyed everything so much more. ❣️

Only my 2 cents worth, but after I cook ground beef, I drain it and wash it under the faucet. I let it rinse into a big bowl, so the grease doesn't go down the drain. But, as you said, it all depends on the meat and the grease content. It's just something I always do, even when making tacos. Your video is wonderful and I love that kitchen! Thank you.

@@christinemhosie9832 I put the washed off grease from the meat (after it is cooked of course) in a bowl. I let it cool and mix dry dog food in it for my huge dogs. They love it and it does not end up down the drain. I'm very particular with what goes down the drain. Before I had big farm dogs, I let the grease cool and wrapped it in newspaper which helped with burning brush and leaves. I've just never liked greasy foods. I also know that some meats like ground round sometimes don't have a lot of drippings. The lady in the video however, has great recipes and I'm sure she doesn't use very greasy ground round or hamburger. I'm going to try her recipe soon.

Oh thank you for this! My mom gave me this recipe ages ago, but I lost it and she’s gone now. You gave it back to me. I think she also put diced bell peppers and scallions in the cream cheese mixture.

Old school cafeteria lady trick... instead of oil add a little water to the meat. Saves calories AND grease popping. Drain before you add any other ingredients. Excess grease drains off with the water.

This recipe is a winner! I hd a little left over besciamella white sauce left over from making lasagna, and added it to this white sauce, it was outstanding!!!!

My Mon made this when we were kids and we loved it! I still do in fact, but my Mom did something slightly different,. She chopped a cup of green onions and a cup of green peppers and put it in the cheese mixture. Very tasty.

Got a very similar recipe from an old 70's cookbook. It was called Hamburger Bake. Green onions add a great flavor! Not as good without them.

i made this tonight and will probably add ricotta cheese next time instead of the cream, cottage and sour cream. It was very tart for my family but a great dish overall. Thank you for a handy recipe.

I like how she scrapes down the pan/bowel of mixtures. Drives me crazy when you watch chefs leave the mixing bowls un-scraped - what a waste of ingredients! I also appreciate her easy-going attitude and approach.

I agree with you - it bothered me too. Besides, it kinda throws the measurements off, if a big glop is left in the bowl.. But then I got to thinking, the TV chefs are usually pressed for time to get the recipe done and scraping the bowls properly might take valuable seconds..Of course, they probably do it at home like we do..

It was a good recipe and video but she was driving me crazy by not scraping the onions off the side of the pan and not stirring while she's talking. LOL I guess I have a little OCD. :)

Glad you mentioned the sugar in the tomato sauce. My mother taught me that and it really makes a differnce. This looks great!

My mom was making this dish for us in the '60s. We called it "Company Casserole." Mom's recipe called for green onions too, but not the cream cheese or the croutons. Its the only dish my sister, who does not cook, makes for her son. We loved it.

I bottled 400 lbs of lovely red tomatoes and my house looked like a tornado hit it as we had three small children, a big dog and two cats, 4 ducks, two chickens and it was February, our hottest month! All of a sudden my baby brother from Europe arrived with his wife and children. My friend asked whether I felt embarrassed by the mess. I said had they rung I would not have started the bottling and slung a vacuum cleaner through the house and put the children in clothes as it was hot and they were playing with the hose so butt naked (We live in the Bush) My Dutch sister in laws nose went up but I just ignored it. I asked would they like to come to dinner next night and they accepted. Afterwards she told my Mum that the place looked spotless, as though I cared. Take me as you find me, love a clean tidy home but sometimes not possible to do both families and home. Do the best you can! Love this recipe! Thank you xxxxxx

Sharon Buening I grew up in Flint Michigan. I loved it there. And I really enjoyed going to Macinaw Island. It is a beautiful place. Loved everything about it. Especially the ferry ride over and the fudge shops. 😊

If you don’t have one of those chop and stir things, on old-fashioned wavy wire potato masher does a great job of crumbling ground meat while browning it.

I use my plastic spatula/turner/flipper. That gadget leaves the meat in big chunks.

A bell pepper n whole box of mushrooms wd do this a lot of good. Also, plenty of crushed red chilis to give it some zip...and parsley! Should show the spectacular salad she serves with it, too!

The negativity is ridiculous, it IS really very good! I was just saying get the spatula for the creamy mixture lol clean out the bowl. If you don't think ya like it, the ball's on your court--- don't eat it!!

Seeing a casserole like this makes me so nostalgic, why did I ever stop cooking this way. Now I'm 75 in the middle of COVId and nothing looks better. Will COVID take us back to guiltless eating?, will we stop the " one new tool, one new vinegar, one unknown ingredient way " of cooking. It has cost so much to cook in this gourmet method. I could cry about all the years spent cooking the Upscale Way, bring back casseroles, we're as fat as ever and nothing but money has been spent.

My husband is from Cadillac, MI. This looks great, can add or subtract anything part you want. I mix the dairy into the noodles. Jared spaghetti sauce saves time too.

I use ground turkey most of the time when a recipe calls for grd beef. Sometimes I mix grd turkey and beef together. It is very favorful. It looks delicious. I've got a lot of company coming this weekend.

My mom used to make something almost identical to this when we were growing up back in the 60s. No wine tho. We called it “Goop.” :-) It was one of my favorite dishes as a kid.

Looks delish and haven't had a casserole like this in far too long. Hint ~ return the pot to a boil then turn down heat low enough to simmer. A wooden spoon laid across the top of your pot helps prevent boil over and you can rest the lid on top of the spoon if you want to maintain the simmer.

I took a pasta making course with an Italian chef. I was surprised to learn that I was under salting my pasta. The saying is "salty as the sea" when making pasta. This looks yummy.

I always put salt in first. Never had problems with my pans. I like this recipe with ground turkey, chicken and pork as well as the ground beef. My mom always made basically the same casserole as you, it's not new.

I make one like this that also has sliced cooked carrots and parsley mixed in withe noodle mixture and tomato sauce in with the meat. I add Italian seasoning when I want to make it more Italian.

This is like a company casserole my mom did called Beef Carrot casserole. Have beef, onion, tomato sauce layer and couple layers of noodles, cooked sliced carrot, sour cream and cottage cheese, beginning with noodle layer, I think. Really tasty. I change it up to an Italian version sometimes, using spaghetti sauce instead of tomato sauce and adding garlic and Italian seasonings with parmesan, Romano cheese on top.

A tip for cooking pasta: Get the water boiling, add pasta, bring back to a boil and stir, then turn off the heat and let it sit for 10 minutes in the water. The pasta is perfectly cooked with no overcooking or boiling over.

I used to be a chef for Maria Von Trapp in Stowe Vermont I work for her privately and she loved my tuna casserole she invited her whole family and made such a big deal of it that she wanted casserole every night whether it be tuna Chicken beef or just vegetables and cheese she loved casseroles that made me her star chef she's had many chefs almost every month a new one but I was the only one she loved the most she loved my cooking I miss her today Maria Von Trapp was the lady that world famous for The Sound of Music

I'm almost 70, have put salt in first forever. It is an electrolyte that makes water boil faster, saving power and money. After water comes to boil, put in pasta. Never had a problem with my pans. I did note she put in more than necessary. Just requires a little.

Italians tell you to dump a bit more into the pasta water, helps give the pasta flavor, and it doesn't add that much salt with all that water to the pasta
