The olive oil is an ingredient of the pesto. It's put on top to seal it but is meant to be eaten along with all the rest. Just give it a little stir. You should still be able to see it floating in the pesto, not thoroughly blended.

Greetings from the middle of Nebraska where we grow the best sweet corn!! I actually put up about 5 dozen ears of corn this summer. I actually use an electric knife to cut the corn off of the cob. I gave a couple bags away to my neighbor (I had to borrow her electric knife as mine died for some reason; could be that I got the knife as a wedding present 45 years ago!!!!) I was able to get about 12-14 bags of corn for us. I can't wait to eat it this winter!! You have inspired so many of us to freeze so many things for use later. You make everything look so easy. Thank you for taking us along in your busy days. God bless and it is so sweet seeing the kiddos!! Your mother is so generous in her gardens and sharing her wares!!

🎉yay gardening, hot tip : peaches are like tomatoes, you can throw them in the freezer whole and the skins pop right off when you run them under hot water when ready to use them. I’ve been putting stuff up on the shelves a little at a time throughout the summer this year: fridge pickles, pickled beets/okra/peppers/relish/squash relish, cowboy candy, squash, applesauce, apple butter, freezing pesto & pumpkin purée, lots of jelly…even tried cantaloupe jam this year.

Love this video! The only way we get dill to grow is literally to scatter the seeds in a random patch of garden bed and ignore them 😂. We tried to grow them from seed, inside, under a grow light, transplant them, etc. and it never worked! But my husband had extra seed that his dad gave him and he just threw it in the garden bed and we got a bunch! It likes to be ignored apparently!

I did the same and had great results. After last years planting I had volunteers coming up this year and I also scattered more, so I have dill growing quite well everywhere, which is okay. It makes a nice filler 😃👍🏼

25:16 Megan I dry celery leaves, parsley and cilantro using the light bulb in my oven. Takes 24 to 48 hours but I love the results. An oven bulb is very low wattage.

I love to make pesto and freeze it for the winter. I love freezing it in an icecube tray, then putting it in a freezer bag so they are easy to grab when needed!

If you freeze your tomatoes, the skins will fall right off when you thaw them, no need to take the skins off first! ◡̈

So happy to see the art of preserving food still alive! I've made elderberry jelly and blackberry jam this summer. I learned jelly making from my grandmother and I'm blessed to live on the farm where my grandma's beloved berries are still thriving! Thanks for sharing your "micropreserving" recipes Megan. As always, you are truly an inspiration!

I agree. There is nothing like having corn in January that tastes like I just picked it off the stalk! It is worth the processing and cost. Love it!

Last year I had a batch of pepper jelly that did not set up, so we used it as dip. It was the best dip! We used every jar of it! So far this year all of my jelly has set up, I would love to have another batch of “ dip” though!

You should try vacuum sealing your frozen fruits and vegetables. It's so fun and really makes things last longer.

I love your concept of micro-preserving, but admit I did a little chuckle when I thought of those three boys in a few years and how much food they will devour and then you’ll need be macro-preserving! 🤭🤭🤭 Thank you for the video and oh, I wish I was there to share some pepper jelly with you! 💛🧡💛

Been canning peaches and peach syrup for the past two days. Still have beets and peppers to do for this week. Corn, apple juice and grape juice is coming up soon. It’s labor intensive for sure. But a good thing to have done at the end of each season.

Tip for cutting corn off the cob-put the tip in the hole of a Bundt pan, hold and cut the corn off. It falls right into the pan and is much less messy. It’s just the two of us and I still freeze enough corn for the year. And I fill 2 larger freezer bags for Thanksgiving. You are completely right-store bought corn is NOTHING like corn brought from the farmstand and frozen!

Hello Megan thank you for your encouraging video. The olive oil on top of the pesto you can use it as a flavoured basil oil on salads, pasta, tomatoes, etc. Be careful with planting mint because it is difficult to control so use a small separate patch for it (better if a single raised bed to avoid any risks).

As a family of 5, I bought a bushel of local corn and cut it off the cob with no blanching, froze it, then when you thaw it, you cook just like any other corn. Cuts down on the time to preserve without sacrificing flavor!

I thought of you the other day. I made a big batch of cucumbers, tomatoes, and onions. They were amazing. My mother froze more than canned. Everything was frozen. We had 2 huge freezers, one was for fruit and vegetables, the other for meat. I grew up on a farm in Indiana. I've still got black soil running through my veins.❤

I love Thrive! Anything I don’t have to treck around the grocery store for is a plus! I buy all of my grains beans canned tomatoes most canned items snacks maple syrup and they always have some type of fun products I usually wouldn’t think to get. I also love that they have so many organic options. I agree with you on the Poppi. I’m a big fan of the raspberry rose and not the others.

Yess I dry my basil but without a dehydrator just a cloth in a flat basket, on an undisturbed shelf. And in a week maybe they’re ready and I put in a new batch and I keep the dry leaves loosely in a cotton drawstring bag (so it can breathe just in case there’s a tiny bit of moisture left) in a drawer.

I love the idea of micro-canning / preserving. I always feel like I don’t have enough product at any one time to do a preservation day. I didn’t really consider doing smaller batches of multiple products or different methods of preserving like products. That would also be a great way to find your families preferred method for each type of produce or my preferred method with regard to prep, cooking and storage etc. Thanks for sharing your knowledge and recipe tips and tricks.

We also freeze pesto! We do it in 1/2-3/4 cup portions for pasta and vacuum seal it. It can last for years in the freezer! I need to make more before mine goes to seed! As for dill, mine grows like a weed early in the season and by the time my cucumbers are ready, it’s dry and brown! I guess I need to start seeds later, but it usually reseeds itself and I forget 🤷🏻‍♀️

If you want your pepper jelly to set better you could add another 1/2 to whole package of pectin/surejell

We love pepper jelly. So good. When I had kids I realized I have to micropreserve. Perfect for those pockets of time. So smart to freeze fresh corn. It is a huge difference; don't know why I didn't think of freezing it. Wish I would have thought of that when corn was cheap this summer. Will have to watch for a sale. Totally trying the peach syrup.

I use my OXO salad spinner for drying basil & spinach before dehydrating or adding into dishes. Works great! I love the idea of micropreserving! It's just me & my two teen daughters, so big batch canning/freezing isn't practical for us either. I like the simplicity & quickness of freezing. And I prefer waterbathing canning over pressure canning because it kinda scares me that it might explode. 🙃 So I only can what foods can be done with that method. But it works out well for us, especially for jams, jellies & sauces. Thank you for sharing your micropreserving ideas! Keeping y'all in our prayers! God bless!🙏🥰

I used to freeze pesto in ice cube trays then you pop them out and store them in a zip lock- makes it easy to use as much or little as you want :-)

Megan just enjoying this video and had a thought to share. My sister just to a new Samsung refrigerator and here’s the part that may interest you the freezer makes two, yes that’s right two sizes of ice. One of them is thee smaller size nice for drinks. So if you find yourself needing to replace your frig you might wann check that out.

I agree with you regarding Sure-Jell removing the paper in their boxes. Had I known they were doing it, I would have saved a couple of the instructions. I did find online photos of the sheets so I use those.

I like to make a season's worth of elderberry syrup and freeze it. I freeze homemade apple sauce, etc. I have never canned but I want to learn!

Also, silicone molds(even a silicone muffin pan) are a GAME-changer for freezing things!...even things like broth! Then you can put the frozen chunks in the freezer bag just like your peach sauce/nectar 🍑 😊.

The oil on top of basil is great to use on toast to make crostini or even on pizza crust before topping with preferred toppings then bake. Yum

I just froze corn too. We grow our own, but the seed is expensive and it does take a lot of water. I actually don't blanch the corn....I just wash it, cut it right off the cob and use the vacuum sealer. It is so good! I love your videos! You're so creative and inspiring 🌽😊

A friend & I did did 80 dz corn together at her house this year. It was a big day! But she had a good setup. We got like 2 1/2 QTs to the the dz so LOTS of corn!!!! The last couple years I’ve done it alone & it’s definitely easier having help. We plan to do it like that again next year

You can use reusable tea bags to put the syrup in your big glass drink holders. Where did you get that green vase on your table and black skirt? I love them both.

Hey Megan I know you have done some already and that is okay. Just wanted to let you know for time saving that you can wash your tomatoes after picking, core the top center and make a cross-cross on the bottom. You can weigh out your tomatoes for batch purposes, place in a “Freezer Ziplock Bag” When you’re ready to process take out of freezer let them thaw a bit and the skins will come easily off. With now being in my 60's... I am now doing small batches of preserving items and freezing them!!! I agree with the sweet corn~~!!! Homegrown is the best!!! The lady that I get my brown eggs from, canned me some pints of peaches (like 12 jars). I gave her a lot of my pint jars and so she offered to can me some in return!!! Awesome!!!

Little tip when cutting corn off the cob. Push it through the center hole of a bunt cake pan. The corn collects in the pan . Or if you have one of those pineapple core products works great too. I froze corn green beans, broccoli, and cauliflower. I also canned tomatoes and peaches. I really want to do some pears too. My granddaughter is coming up from Georgia and asked to make applesauce. I love preserving. You are absolutely correct putting up your own corn is so much better. The corn I got was from a stand down the road from the Good store. I really love to visit the Lancaster area. I hope to shine day fun into you. ❤

Last year I froze white corn it does not freeze the same as white color or yellow corn. We enjoy popcorn. We enjoy it the corn we cut off the cob and freeze

I have had better luck using liquid pectin for canning pepper jelly. Sets up better. I enjoy your videos!

I’ve been doing something like this too. Sometimes I’ll make double dinner and put one whole dinner into a casserole pan and freeze it. It creates a buffer and taking care of my future self by taking the stress off for just one night.

I love homegrown corn especially peaches and cream sweet corn. I payed $6 a dozen from my local farm here in East Tennessee and since it’s just me I bought 4 dozen and cut it off the cob and got 12 courts to put in my freezer. I usually only use it Thanksgiving and Christmas for family and friends.🌽❤

The peach cubes it lemon peach drink sounds and just must be delicious!!! Just sooooo wish peaches were not so pricey in our area I'd definitely would give it a try.... I do lots of preserving although this year it's not been as much because an overwhelming much was done last year. Did corn also recently, not all for just us, but we froze altogether almost 360 cups😮
