I'm Canadian, so I can't speak for Americans, but I use buttercream because I like it best and it is easy to work with. Lots of the cakes I make for my cake business have fillings that are fruit, custard and cream based.

For those who dont like that much buttercream frosting substitute half the butter with the same amout of creamcheese its delicious...and creamcheese with whipped cream & sugar its the best frosting ever!

oh and small tip when u bake the blue cake add white chocolate chips tastes good and somewhat resembles the stars :D and shouldn't the pattern be red, white then blue? Cuz it kinda looked like the french sovereign flag (the outside icing bit i mean)

Well now I just figured it out on how to make a Greek cake. I want to make a cross in that blue so I have to cut only 4 parts out and fill it in with white frosting. The other layers will be blue and white so all my layers need to be blue and white but the blue on top is what I payed attention to for the top left hand corner of the flag so when you cut it, it will form a cross. Now for the American cake, how do you make the white dots for stars within that top blue layer ?

Honestly, sometimes it's not worth the effort and if it's broken too badly, I start all over. Freezing the cake can sometimes help...it makes it easier to work with, and then the buttercream can be used to "patch" it up. Refreeze once you have a layer of buttercream, and you should be able to work with it a little better from there.

How much buttercream you need will depend on the thickness you put on your cake. That is up to you. Start with one batch and go from there.

Thank you so much for this video. I read a couple of comments that made reference to the order of the colors. Actually, there is no specific order of the red, white and blue colors, Having owned a bakery, I can tell you that the engineering involved in getting those colors split exactly in an order - is very time consuming, I am going to make this cake in a couple of weeks for a party to celebrate my husband being sworn in as a U.S. Citizen. Oh, I see...if it is not staying where you pipe it, it is most probably too soft, so yes, putting it into the fridge or adding more icing sugar is best.

Until it is frozen...the colder the cake, the easier it is to work with. Under the lights in our kitchen, my cake softened quickly and was harder to work with.

Hey Jen, Your opinion, on the American flag cake. I am going to try it but with red and blue velvet cake with cream cheese frosting, but I want the middle to be a white chocolate mousse filling. I know the frosting is best as glue, but I was thinking do you think it might work if I use a big glob of mousse, do a quick cream cheese frosting crumb coat, pop it in the freezer before starting the blue part, and proceed from there (so the cake and mousse is more set).Or do you think it might not work since mousse is very light and airy. Thanks..
