Just got back from a quick ~mile walk. If you ever happen to be heading West on I10 between Lake City and Jacksonville FL there's a 'Fanny Bay Trail' that's part of a rest stop on I10 West. There's a nice little boardwalk through a swamp. Check it out.f Great video!

You needed a much larger fire to produce coals. Preheat cast iron. It takes a long time to get hot. Not really too bad for your first try. We lined ours with tin foil for our brownies and upside down pineapple cake.

Hey Kelly, as always, loved your video. When you say a pizza from "scratch" you mean "scratch." I don't know many people who make their own pizza sauce...I'm impressed. Hey, get yourself your own space heater for the van, you won't regret it especially on these chilly winter nights. One more thing....Go Lions!! (I'm from SE Michigan).

Preheat the dutch oven before putting in the dough. Use almost half the amount of dough that you did for that size oven. And, when forming the pizza dough, start in the middle and press the air out towards the crust edge. This will push all the air to the crust edge and give you that nice airy cornice. DONOT press the edges of the dough down. Go from the center, outwards, leaving two fingers worth of untouched dough around the edge. I have been making pizza for over 6 years now about twice a month, and still learning! It actually looked pretty good!

Such a pretty place. Arkansas has a lot of beauty. I visited Petit Jean when I was in elementary school with my family. About 10 years ago on a cross country road trip I stayed at a KOA near the PeaRidge/Elkhorn Tavern Battlefield park love the mountains there and so many other places I would like to go back and visit.

Awesome cooking. A lid trivet is great so you can lay the lid on it and keep the underside clean. Then a lid lifter clamps on the handle to keep the lid level with coals on it. These two things are essential for Dutch oven cooking. Briquets are also awesome for controlling heat. You can move them around with metal cooking forceps.

Love your adventures... Dutch oven cooking and baking are very different. Cooking is fairly easy. Baking, on the other hand, is slightly more deliberate. First, as you discoverd, baking takes a better supply of coals. If your car camping (dutch oven) adventures are near any lakes or rivers, dried driftwood makes excellent coals for baking. Since you're not backpacking this equipment you might want to consider a pizza stone or pan. Most importantly, for baking, pre heating is essential. Sorry I missed you in Florida...you camped all around me. Canaveral, Jonathon Dickenson Etc. I'm looking forward to many dutch oven treats to come. Be safe !

I want to go tent camping in the Arkansas mountains. I think it would be fun on a 3 day camping survival with everything you need.

Your pizza looked good! I’ve struggled to make them half as good as yours in my oven at home. If you try again, after you get the dough in the cast iron, it helps to use a fork and poke a bunch of holes in the dough it helps to keep it from getting so puffy.

we have a tripod we use with our dutch oven so the actual pot hangs from a chain. That way you can hang it directly over the fire and adjust the height as necessary. Keeping it right over the fire seems to capture a lot more heat than having it down in the coals.
