Assamese Boiled Daal
Ingredients
Toor, Masoor & Moong Daal - 1/4 cup each
Diced Lauki(bottle-gourd)- 1/2 cup
Diced Aloo - 1
Diced French Beans - 1/4 cup
Drumstick(cut into 2”pieces)- 1
Diced Tomato- 1
Sliced Onion- 1
Grated ginger - 1 tsp
Salt to taste
Turmeric pd - 1 tsp
For tadka
Mustard Seeds - 1/2 tsp
curry leaves - 5-6
Hing - 1/2 tsp
Methi seeds - 1/2 tsp
Green chillies - 2
Oil - 1-2 tbsp
Fresh Coriander leaves for garnish
Method
Soak the daals for half an hour. In a pressure cooker, add all the ingredients except that of tadka and give it two whistles.
Once completely cool, open & let it simmer uncovered till all the veggies and Dal are properly cooked.
For the tadka, in a small pan, heat oil & add mustard seeds. Once they crackle, add methi seeds, curry leaves & slit green chillies. Pour it over the Daal.
Garnish with freshly chopped coriander leaves & serve hot.
Tawa Fish Fry
Ingredients
Surmai Fish Fillets - 4
Marination
Salt, pepper & lemon juice to be directly applied to the fish. In a bowl, add Gg paste, Turmeric, Red chilli & Coriander pd, chat masala,
2 Tbsp Rice flour, 1 tbsp Oil & Water to adjust the consistency
Method
Marinate the fish with the above and keep for not more than 10. On a hot pan, place the fish & cook till nicely done on both sides.
Serve immediately with sliced onions & lemon wedges on the side.
Ghee Bhat
Ingredients
1 cup Basmati rice
2 -3 tbsps Ghee
2 cups water
2 Tbsp Cashew nuts and raisins
Whole spices like bay leaf, cinnamon, small Cardamom pods, cloves & peppercorns
Salt to taste
1 tsp Sugar
Method
Wash & soak rice for 30 mins. Heat a deep pot, add ghee. Once hot, add the cashews and raisins. When plump, remove & keep aside. Then add the whole spices to the same pot. Once fragrant, strain & add the rice. Stir fry for 5-6 mins. Then add the water & let it cook for about 10-15 mins. Check water for seasoning when almost ready add the sugar & the nuts. Stir just once gently and serve hot when all the water has evaporated and rice is just cooked.
