Thank you for your delightful cooking demos. We eat tons of varieties of mushrooms in Japan. My favorite is the maitake as it is very deeply flavorful. We generally slice and sauté mushrooms in a bit of sake and a whisper of soy sauce (at the end). I like to use a lid to preserve the liquid. My favorite combinations are mushrooms and fresh spinach sauté (may want to blanch spinach and drain before adding to partially cooked mushrooms) and mushrooms with pima (Japanese green peppers). Tender green and red bell peppers might work well, too. We tend to serve these mushroom dishes as accompaniments to rice, but would work with sweet potatoes or white potatoes, or udon noodles. Sometimes we add a half cup of frozen corn kernels to either dish. My favorite family restaurant serves a giant mushroom salad that I adore. The salad has various greens and tomatoes with a warm cooked lemon and onion dressing. There are cubed potatoes that have been browned and are still warm, as well. Across the top of the salad bowl are large sautéed (still warm) sliced mushrooms (portobello sized that are verically sliced, including stems). Japanese cooks use a wide variety of vegetables. I hope this gives readers some additional ideas on using mushrooms and onions.

Love these gals! By the way , I use moms idea of balsamic when I make Brussels sprouts. Cut in half, cut side down and add some water. Let them cook awhile then add the vinegar. Turn them and shake the pan. Heat off and cover. Let them steam a bit. When tender remove from pan.

Love you guys!! Just wanted to share with you how I cook my onions. I chop them up and then put them in the steamer and then put them in the microwave for 5 mins per onion. When they come out they are nice and juicy and 80% cooked! Then I put them in fry pan and sprinkle generously with smoked paprika, Montreal steak spice, 1 1/2 cap of liquid smoke and 2 tsp of maple sugar(no sugar added). Then I add the too Our Hummus! OMG…..So delicious I sometimes eat it right out of the bowl 🍲!! Thank you sooo much for your recipes and entertainment!! 🥰👍💐
