I was so tempted to order pizza tonight. But I saw this video and thought I had almost everything to make the taco soup and it looked so easy. I made some substitutions with what I had. Just waiting for the natural release to finish. I should try that - I'm not entirely sure it'll set the same - might need to adjust baking time. The firm tofu helps give it it's body.

Awesome that you made waffles and I tried this morning before I watched this video. Lol I was trying to just take my regular oats that I eat in the morning and put a few other ingredients and transform them into waffles without spraying the waffle pan because I am really trying to stay away from oil. That was a mistake. If I could add a picture on here you would see how I ended up eating most of it out of the waffle maker because I always eat my mistakes. I did put the second half in my air fryer and the top got crunchy but the bottom didn't but I flipped it out onto a plate and put my fruit on top which I usually do the way you were showing as well and it was delicious. It was ugly but delicious. Your family seems very sweet and accepting accepting of trying new things. My next dish I'm going to try is your quiche. I'm excited!

The quichie is crazy good. WAFFLES ARE THE WORST. I never have luck with them coming out of a pan nicely without some oil of some kind, sadly... I mostly stick to pancakes :)

Honestly Mexican is the way to go. You can have corn tortillas/shells so that helps for people who are gluten free. You can include meat options if needed, and dairy free sauces/cheese. Make it like a buffet and people can build their own tacos/burrito bowls, etc...

Thank you very much! I love the Mexi buffet idea. My biggest issue is the proteins. I would like to cook them and keep in a slow cooker so they stay warm/tasty for a couple hours without drying out. I'm thinking of using TVP for the "beef" mixture and soy curls for the "chicken" protein. Have you done either of these for a party/potluck and kept them warm without drying out? Do I just keep it on low and add more veggie broth as needed? I think the refried beans should be easy enough. I truly appreciate your advice and knowledge on this subject. Thank you!

You add tomato paste & spices to the soup. Ugh. You should bloom the paste & spices BEFORE you add liquid. Cooking 101. Duh.

First I don’t cook with oil so there’s no source of fat here to bloom with. Secondly it’s an instant pot meal. Cooks all in one. Third - tastes awesome regardless of my apparent lack of Cooking 101 :)
