I made the Pickle nugs. I followed the recipe with these shifts... I used Big Mountain soy free tofu. I used Dave's brand pickles and did half a cup of pickle juice, half cup of cider vinegar. I used GF bread crumbs. I also made it in my airfryer. I loved the crunch and the texture of the tofu. The taste wasn't screaming pickles to me. Yet, this wasn't for lack of it marinading them long enough. What I wasn't prepared for was how high the sodium was for me. Talk about retaining water lol. The tofu must've really soaked it in. I would do it again but just use cider vinegar and not bother with pickle juice. The flavor didn't pull through enough to make the sodium overload worth it for me. On the side... I used the breading on some potato wedges and threw those in the fryer with the nugs. That was a win 🏆

I think everything looks uncomplicated to make and super delicious! The only recipe I would not make is the golden milk, just does not appeal to me, but I am glad you liked it! Thanks for this compilation. I love to be reminded of recipes and your cookbook reviews are amongst my fav videos!

Oat bars 2 cups oats 1 cup oat flour 1 tsp cinnamon 1/2 cup sultanas 2 tbs honey or maple syrup 1 tbs a c vinegar 3/4 cup water 3/4 cup any plant milk mix and pour onto lined tray flatten out about half inch thick bake 220 Celsius 15 minutes cool 10 minutes cut into squares I double the mixture so l have plenty to freeze then l have one or two each day. This has been my go to for years l still enjoy it

Just to think, all of these wonderful reviews, (with a normal family of picky eaters just like our own families), are all due to that chance encounter of the vegan cookbook you found in the gutter, (isn't that where the tofu balls and spaghetti recipe is from?)!!! Your reviews bring back double memories, from my girls growing, to our grandson from the moment he started eating, to the now taller than me teen with the deep voice. All picky eaters... Let's not forget our spouses/significant others! I often have said the reason i am the cook in the family is because I am the pickiest eater, it is called survival! And now that I am WFPB... The family can't wrap their minds around it. They either eat or ignore the food i cook, or make their own, (no big deal, they were always that way.) We don't use oil mostly at all, and we use salt in baking when required, but really limit it in our food. We don't eat processed white sugar, but we'll eat other forms: maple syrup, coconut sugar, dates, etc...
