Mom, Grandmother (Oma), Great Grandmother...Mrs. Fritz shares her favorite recipes that her family and friends have been enjoying for many many years. Most are Hungarian or German, with some Canadian as well. This is the fourth recipe in the series. Her "yummy" Hungarian Goulash and Galuska.

I love your Oma. My neighbor said he missed Hungarian cooking. I decided to try and fix some for him. I watched many different cooking videos but it was yours that touched my heart, so I ordered the things I would need and watched and took notes. I made the Goulash first. I called my neighbor and told him the price he had to pay was total honesty. I have no idea what it should have taste like so he promised to give me an honest review. His wife was quick to tell me that he is a tough guy and nothing makes him cry, but he cried because it was exactly as he remembered his mother making. I am so glad I found your videos. I love your mom and I hope she is still doing well and that she knows in some way how many lives she has touched in a positive way/

My Mother, of Czech/German roots, made a lot of Oma's dishes. But being raised with almost nothing through the Great Depression, some of Oma's habits would have driven her crazy! You scrape out every last drop from a bowl with a spatula! And then you make sure with a clean finger! Absolutely nothing went to waste. Old habits from the days of yesteryears... Thanks Oma!

Oma, this is one of your viewers. Just found on Utube about 2 months ago and have made your Hungarian Goulash with Galuska. I'm Italian, my husband Irish. We both loved it. Your instructions are given easily and of course I love all your recipes. Today is Easter Sunday and decided not to make any of my Mama's Italian specialties but am making your beef goulash. I had to wait for a very good brand of paprika and maggi. Happy Easter Oma and hope you are well and enjoying your family. It's wonderful to have a son like your's doing such a professional job of your videos. You are just wonderful. I lost my Mama in 1989 and I did have her recipes and did get help from siblings. I published a book basically for the future generations so she will hopefully know her and my Dad as we did. Bless you. Loretta Lawrence

Without the paprika, it's plain beef stew the way I make it and I'm Mexican! But I have never tried it this way. Looks delicious to me too. My Czech mother-in-law taught me how to make similar dumplings made with mashed potatoes and dropped by the edge of a plate on to the hot water to cook and then she would add them to fried cabbage. I NEVER tasted anything so delicious. They are time consuming but so worth the extra work.

Looks yummy! Galuska, Spaetzle -> I guess the latter name is not in use anymore, only galuska - but 'nokedli' is the most popular name for this kind of pasta in Hungary. Another pasta version, the "Csipetke" is also popular ("csipet" means "a pinch of sg"): you add more flour to the dough (to make it as hard as playdoh), then you pinch little pieces of it and throw them right into the boiling, salty water. Csipetke goes well with the little more watery version of goulash, the "gulyas leves", a thick soup. As for nokedli/galuska, my grandma told me the dough is ready to be cooked when working it produces air bubbles in the dough. I haven't managed to make a perfect batch yet :)

I was born in London to my German mother in 1965 and in the mid 70's when my dear mum finally got some money, together with my 3 sisters and brother we travelled to Germany so we could see her parent's, my grandparents for the first time. It was the greatest adventure! I remember my grandmother making Spaetzle with a meat sauce. I remember my grandma standing over a huge pot of boiling water slowly tipping in the Spaetzle mix whilst slicing it with a knife as it came over the edge of the bowl. I could hardly see her hand move! It's one of my oldest memories for some reason and it was delicious. And my aunt and uncle owned a dairy farm in another village and the food we ate back then was divine.

Super glad I found this recipe! As a kid we had some Hungarian family friends and later on some extended family too when a cousin married a Hungarian boy. Always got so excited whenever we were invited to dinner for a family event or a special occasion, the food was always fantastic. My family is Italian and even the older generations adored the food, which is saying something considering how snobby they can be about food. I think this recipe is more what Hungarians would call a pörkölt, at least whenever we ate with our Hungarian friends and family Goulash (Gulyás) was always more of a soup served as a first course and was quite different to this. One of the Hungarian uncles once explained to me that the use of the word "goulash" in English to refer to a pörkölt came from the times of the Austro-Hungarian Empire. In Austria even still today, what they cook and serve there and call "goulash" is the same as this slow-cooked beef stew. So it looks like it was in Austria that they mixed the names up and that's the name that ended up being exported with the dish to the rest of the world. Also I always was told those noodles were called "nokedli" in Hungarian. They used to make them exactly the same way with a "spätzlehobel" above the pot just like in this video. Is there a difference between nokedli and galuska or are they just different words for the same thing? Thanks so much for these awesome videos, Oma is the best! Brings back so many memories, I'm making this for sure next winter.

Now i can make the stew that goes with it (if i can find Hungarian paprika anywhere)

I made this today. FANTASTIC! Bought Maggi (imported from Germany, with the red cap - not yellow) through Amazon. Used crushed garlic added half way through the onion saute, instead of garlic powder. I also seared the meat separately with salt, pepper and olive oil in a hot cast iron skillet before adding it to pot and slow cooking. For the Galuska, I used Pillsbury Cake Flour. It was super easy. Don't let the galuska maker sit over the hot steam too long or your mixture will stick to it. 5 STARS!

Hello Oma 😁 At first i must say you are great. That is the same way my Grandmother and Mother make the Spätzle 😁, but the use Spätzle Brett (Spätzle Board) or a Spräzle Press (for larger Amount). The Goulash looks amazing. Greetings from the Lake of Constance (South Germany)

My husband and I love watching your videos. His Oma cooked exactly the same- she RULED the kitchen. We think Oma needs her own cooking channel. :)
