I LOVE these, thank you so much for sharing. I have added no sugar coconut flakes and no sugar carob chips, chopped walnuts.....awesome! Use a potato masher for the bananas!

Those sound like yummy additions! I have tried chocolate chips and walnuts but not coconut yet. I bet they would be good with coconut and some drained crushed pineapple!

I will definitely try these, they look great! I don't know much about baking, but I was thinking about adding peanut butter also, but I don't know what proportions would be best. I might also just try putting peanut butter on top after they are done.

That is a great idea! I was just putting peanut butter on my banana bread which was delicious. You could also try adding peanuts to the recipe. Let me if you try something new!

Yes they come out soft but you should eat them the same day. The next day they are starting to get harder (but I still eat them!). If you want to soften them up the next day you could pat a little water on them and put them in the microwave for a few seconds.

Could you use mashed sweet potato instead of banana? Like sweet potato pie cookies.

Wow that could be delicious! I have not tried it (yet!). If you make it with only sweet potatoes you may want to add a little sweetener like honey, brown sugar or agave. Maybe try using both mashed bananas and mashed yams first to see how it turns out? If it is good you could try decreasing the bananas. If you try it let me know how it tastes. Have a great day!

+John Dexter Octavo I have not tried frying these cookies in a frying pan. You could try it. Maybe add a little less oats so it is thinner and spread the cookies pretty thin in the pan. If you make thicker cookies the middle may not cook very well in a frying pan. If you want to keep them healthy I would suggest using cooking spray and not oil. Let me know how they turn out.
