I just use rice cooker and for those who might think this is undercooked it’s Wagyu and is at such a high quality it should be fine but if you have health problems or are elderly/young/pregnant its not recomended

Cooking sushi rice is different in that you have to wash it more to get rid of the starches So using a colander just makes sense to use to make it a little easier to drain

I work at a VERY high end sushi restaurant. They make a5 grade 11 miyazaki wagyu nigiri that costs $12 for one piece. They sear the side of the beef that touches the rice, and add black truffle paste on the top. It is the best thing I've ever tasted.

My friend says InstantPot makes sushi rice easily. I personally would use rice cooker.
