I can’t remember how many veil marsala dishes I have have seen let alone cooked, a nice squeeze of lemon @ the end brightens it up. Nice job.

Daddy Jack...I watched one of your videos about two weeks ago and you mentioned something about the large spoon Mom always cooked with and sometimes gave you a smack with. I thought that was funny as hell because my Mom was Italian, and only 5.0 tall. Growing up she was always at the stove cooking up some Italian masterpiece and always with the same large spoon, she used it for everything. I remember when we were kids me or my 2 brothers would walk through the kitchen and sometimes she would give you a smack with that spoon, then it was , Mom!, what was that for? ..She would say that was for what ever you did that you thought you got away with!....lol I have her large spoon mounted on the backsplash behind the drop in stove. It's never used it's just for looks and memories.....Keep the video's coming Brother...

That looks fabulous. I'll definitely try this, but with chicken (gotta make the li'l lady happy) or pork tenderloin pounded out thin. I'll be looking for Gaspar's channel, and look forward to the old traditional dishes he'll prepare (I'll be taking notes). Thank you Jack and Gaspar (I saw the wiener schnitzel video and it made me want more) for what you do. Keep up the good work.

I love to do a side of some crunchy rosemary potatoes with gorgonzola cheese on them. seems to work as the perfect side.

I use a dry sherry wine and beef (or veggie) stock for veal marsala. I dont like using a chicken stock with beef and vice versa.

David, 30 Years ago Gaspar and I met at a chef's event, he was stationed next to me. In had extra help and he was alone, we helped him out and we became instant friends.

Very common in commercial kitchens and restaurants with high output, and it doesn't matter on a gas flame commercial stove top....LOL

ooooooo we love chicken marsala i have tried the veal its quit good... thank you my friends anything with lots of sautéed mushrooms is good... just hole mushrooms in garlic chicken stock with olive oil is fantastic...mush rooms make me fart but man do i love them.meal are way different abroad its a hole knight expirance not rushed out the door..
