Jack was a very special human being. In addition, though he was professionally trained, Jack chose to be 'the working class' chef. His recipes were affordable, delicious, generous, and practical for the home chef. I watch his KZbin episodes again and again; not just for the recipes but to enjoy Jack's demeanour, his way, his love of people. He is sorely missed and will always be appreciated. RIP in heaven Jack.

He reminds me of my old boss so much, bigger guy. Nice as all hell, has jokes out the ass. Stands just like him, cooks just like him, old school Italian. He made sure I was fed & had a couple beers at the end of my shift for free. I was a dishwasher/cook with managerial responsibilities(keys, alarm codes). Sad to say, Al, my boss past away and had since quit the job. Makes me think of him, he was like a dad to me. R.i.p Al, and thank you for reminding me of him.

The best part about this is not only the addition of that sausage, but the fennel that is going to set everything off. Fennel is a crazy underrated ingredient in ground beef "stews" like this.
