Well i didn't think any of these would turn out. But I am desperate as I cant eat wheat and my husband makes pizzas for himself all the time and it drives me crazy. So tried the cheese base one and the whole time I was thinking this is going to be a disaster. Boy was I wrong. It turned out perfect and so delicious. Guess what? my husband helped me eat it and he loved it. I can't thank you enough. I am so glad I found you xxx

So nice to meet you Becky, welcome do you have a link to Serious Keto Live stream? I can't seem to find it. And if not what did he say lol. Lol thanks so much I have a crazy accent 😅 ❤❤❤
@PinkLady542 жыл бұрын
@@CookwithMel1 I LOVE accents & Austrailia is my fantasy dream place to go if I ever won the lottery!! But I'd have to remember to ever buy a ticket first ;-) Live stream is a paid member perk & it was a couple of other paid members that were talking about one of Your recipes. I'm lucky I could hang onto Your site name after to get here!! I can't do dairy or grains & mostly as long as dairy isn't the bulk of a recipe, I can use a vegan sub. But if the recipe is dairy based, I am not fool enough to think I can throw some nondairy thing in & have it work. Same with a wheat gluten based item. No sub is going to work for that so I just move on to recipes without. I sub sunflower meal for almond with fairly good results mostly. I will go back & binge watch recipes just to hear Your delightful voice & pick up as many tips as I can. Love having a virtual community as I have no friends that want to be healthy, thin & free of food addiction to walk with me in real life. More blessings upon You & Yours in this crazy adventure of Life! Thank You for sharing Your talents with us all!!

Oh my gosh. I was waiting for your response but didn't get a notification. Lol I am opposite to you in that I would love to visit the U.S one day but I also never remember to take the lottery. It must be hard to manage with your dietary requirements...but also hopefully I can do conversations for future recipes at least. It seems alot of people are unsupported by their communities in either trying to get healthy or even managing with allergies. I myself feel isolated too as I don't get out much...at least for the last couple of years and so...I would love to do a virtual cooking class or even a walking group. But I get stumped on the best way to go about it. Ah ok so it wasn't Steve lol. I feel like my channel has only just been discovered and before we were just a little community.
@PinkLady542 жыл бұрын
@@CookwithMel1 No worries about reply. YT does not always do a good job with notifications :-( Sad but true :-) It is wonderful You wanted to reply at all! You are a dear thoughtful Lady!! Do You watch Steve at Serious Keto? He does the monthly challenges to encourage others to join in & does more with paid members like live streams. I will go back & review live chat & see what the topic was. Nili at Indigo Nili made a paid site so she could do more things with ppl that really want to support her channel. A few I watch are on Patreon & I don't know if You have Buy Me a Coffee there, that's what Heavenly Fan does; I am confident You will make the right move for Your channel. It must be nice to be small & able to have time & resources to interact with more of Your tribe but... doesn't pay the bills ;-) It is sad that ppl don't want to support what they love & depend on. I don't know very many who 'work' for free but it seems most YT viewers expect content creators to do just that! GROSS! I think at Patreon ppl can choose to give even only $1 p mo. With even only 20k subscribers that would be a tidy income!! Not that You will have to worry about that from ppl these days ;-) But there are some of us old... er ;-) ppl that will give a lil something; even on a Very small retirement. That may give You a better venue & smaller tribe to spend more quality time with? I am sad my autoimmune thing has backed me into a corner where I can no longer function unless I stay Completely away from grain & dairy. Very lonely life in the food department. But... Life is full of challenges for each of us!! & we will triumph & be filled with Joy!! Thank You for sharing Your skills & beautiful aura with the world!! May the Good LORD continue to bless You & Yours!!

@@PinkLady54 lol answering every comment is taking alot of time but I'm trying to look after people who genuinely need help 😊 I used to keep up with alot of Keto channels including Steve's and Nili but I am time poor these days. At the moment I am working on getting all the recipes onto Pinterest and there's the mammoth task of writing a cookbook. As soon as those are done I will look at Patreon because I do want to do something more personal with those interested. I'm very interested in finding solutions to people who have restrictions when it comes to their diet. But will have to play it by ear and also keep up with the general stuff. Hello Mark, great to meet you. Fresh or dry grated cheese. It only matters that it has a fine texture. Sure you can use egg white powder because it's the same thing when diluted with water. You can also use egg whites in carton. I know some recipes don't perform well if it's not fresh eggs. But this one is not fussy. By the way the egg whites weighed about 30g in case you want to try any these

Hi, Mel! One more question: I tried the crust but used low moisture mozzarella for it. Would it have been better to use a dried cheese?
@CookwithMel12 жыл бұрын
Yes! I don't think a soft or wet cheese would work at all. One would kind of have to do a version of fathead dough to use mozzarella. A dry or hard cheese is best, as it has the same texture and feel of a gluten free flour.

Hello Mel! I am enjoying your recipes! I am learning so much! I started buying some of the basic ingredients like xanthan gum. Is the this ingredient necessary to add? Also, the powdered cheese, is it Parmesan? Thanks!
@CookwithMel12 жыл бұрын
Hello Monica great to meet you and thanks. To get it like mine I would say the xanthan gum is necessary. Some people leave it out but get not quite the same result but it does still work if you increase the Gelatin. The cheese is parmesan or you can also use pecorino 😊
@briangrant99422 жыл бұрын
@@CookwithMel1 can you use beef gelatin instead of xanthan I might just get the xanthan gum if that what it takes to get that fluffy crust which looks very good.

Hi Mel! I found you a couple of weeks ago and you haven't disappointed me. Out of curiosity, how does not adding the protein powder change the outcome and do you have a recommended replacement for it? Thanks for all the great recipes.
@CookwithMel12 жыл бұрын
Hi Monica you're welcome and thanks so much. The protein powder is added just to give you more protein. It also reduced the baking time for me but as you can see...it's not a big deal if you don't want to add it 😉

Thanks for asking that. Many of the protein powders upset my stomach, so I no longer have them in the pantry. They are rather expensive to just try out, with the possibility of not using the rest of the package. I get plenty of protein, so I will just skip it! Love your channel, Mel. Hi Mel, tks for posting the pizza recipe (am the one who asked you for it last time and you kindly said you would) Two questions: 1-do you think I could do the first recipe without xanthan gum? I d have to order some and I don't want to wait. 2- the deep dough of the last recipe looks like a perfect dough for an apple pie type tort. Obviously it can t be done with cheese. Could you please made a video on how to make such a sweet dough with the same type of consistency?
@CookwithMel12 жыл бұрын
Hello and you're most welcome. You do need something added to bind the dough. Do you have Gelatin by any chance? I do want to work on a pie crust recipe but I am working on bread rolls, ice cream cones and cannoli casings at the moment. No doubt it will be tricky but will do lots of testing first 😊

This is great, I had gastric bypass surgery 6 months ago so I'm always on the look out for carb free options. Just one question...how would a low fat cheese work in this? The fat grams per serving are a little high for me.

I am on keto diet now and its been 14 days - I've lost 5 kg so far and really intend to stay consistent with my diet. Your recipes are inspiration. But is xanthan gum dangerous? its a soluble fiber so the body cannot digest and it slows down digestion. I read many conflicting articles and confused..

Congratulations! That's so FAST!!!! Personally I've been consuming xanthan gum since 2016 and have never had a problem. Most keto recipes require a tiny amount, and still that is spread over the amount of servings. I would say its your call on whether you want to use it or not. Thanks so much ❤️
