These videos are so great. I have celiac disease so I can't eat flour or soy sauce (and sadly miss out on so many of my favorite dishes), so having videos like this make it really easy for me to recreate with gluten-free flour and soy sauce!

I made this for tonight's dinner! My noodles didn't look too good (I pulled the noodles too much and they ripped) but they tasted delicious! They paired perfectly with beer. Everyone liked them, so I'll have to make them again.

Hey Mikey, in your other Biang Biang noodle recipe, you had 2 cups of flour and 1 tsp of salt. Was that a mistake? Should I use 2 tsp of salt for 2 cups of flour?

So I'm attempting to make this and even though I've only put in 3/4 cup of water to 2 cups of flour it STILL seems so much more sticky and wet than yours! I'm using bread flour... am I doing something wrong?

I have a question: if it's the salt and oil that makes the noodle elastic and strong (won't break), then will regular all-purpose flour do? Or is there something about bread flour that makes it a better choice than all-purpose? Thanks in advance. :)

ditzpangilinan bread flour is higher in protein so better for stretching and holding together but I’ve made this with APF with some success while letting the roller do a little extra work before pulling
