The Vegan Test Kitchen that aioli recipe is basically my hummus recipe. I make hummus with navy or cannellini beans instead of chickpeas so I’m totally down with this!

Though the sprouts recipe is a bit mysterious, I love the idea of it. But that aioli is clearly the star of the show, I can't wait to try it!

Holy crap there were some major editing errors with this recipe! I'd have given up early on and just riffed on it, so extra props to you for soldiering through. Through a _sea_ of oil. Finished recipe looks like a great concept, and I'm definitely going to try it--with modifications--for my next holiday get together : ) TFP!

peanut oil? why? can't regular olive oil be used? or avocado oil?

I think you can probably use whatever oil you want 😉 I imagine they used peanut oil because it goes well with Indian spices.

Since we're just going to 400°, olive oil would work just fine with this recipe given it's average smoke point!
