"Could Have, Should Have, Would Have!" - What do they mean and How to use them in English!

Could have... Could've... Coulda!

I have seen a Londoner texting me using "of" in the place of "have" - each time he meant "It could of gone well" or "You should of seen it!" etc. He could not see what was wrong with this "of" ;)
