As a mexican (living in Mexico not the US) i can only say that every mexican that sees this video will be skeptical until the part that you made the salsa, THATS how you win a mexican and the cherry on the top is that you made a real recepy, old school recepy, simple and delicious. The cheese not so much but thats your touch and i can respect that. You should trie to make (or learn to make) red rice with corn and peas and then put a bed of red riceand the huevos on top with the salsa you made. Thaaaaaaats another recepy

Little known fact, Italian tomato sauce was inspired by this red sauce you make in all your videos. When the Spaniards arrived in Mexico, they saw the natives making tomato sauce with herbs and peppers. They tried it and liked it so much that they brought it back to Spain, along with some tomatoes (new world fruit). And before you know it, it spread to Italy and became what we now know as pasta and marinara sauce.

I don't know why KZbin suggested me this stuff, but damn I loved your video. My mom had a long relationship with this fine old man, God has him in his glory. He lived for many years in Colorado and learned how to cook Huevos Rancheros. One day he came to my house and said "Today I'm gonna cook you guys some Huevos Rancheros". I have fond memories of that gentleman, he was a true father for me and this video reminded me of him. Thanks a lot, Mr. Cowboy!

I was initially skeptical that you wouldn't do this recipe justice because you are not Mexican, but not even halfway thru, your earnestness and sincerity told me you'd be respectful or die trying, and you nailed the recipe. Not racist at all. An example, it's Extremely difficult to get authentic Japanese food out side of Japan. If I see the chef is from Japan there is a much better chance they won't have changed the flavour profiles of the food to fit the western palate (as much) plus that they are more likely to use traditional Japanese techniques. USA is full of americanised Mexican food. Vast majority of the time you find Mexican in the states it won't be proper Mexican. Hence the hesitance in an American cooking there food.

Great job on your recipe it looks delicious and it must taste really good too. I make mine similar, the only difference is that I add cilantro to my salsa and I spread refried black beans on the corn tortilla before adding the fried egg, then I add the egg, salsa and sprinkle with Mexican cheese queso fresco. I made them this morning.

As a real Mexican, I would try roasting the onion, tomatoes, peppers, and garlic on open coals or on a pan. When they are nice and roasted let them rest in a container. Mash them with salt and let me tell you, you got the perfect salsa for Huevos Rancheros.

Thank you so much for this! My grandfather was a Vaquero in Texas and met my Grandma at chuck wagon over Huevos Rancheros! Happy Anniversary Grandma and Grandpa!!! I miss you! (They were both born in the 1920s) Mexican-Americans in Mathis and San Antonio.

Chile is serious business in New Mexico, and most us have sauce recipes handed down from many generations ago. For my own family, we use only roasted New Mexican chile (there are dozens of registered and trademarked species of New Mexico chile, but the closest match outside of New Mexico would be an Anaheim chile).
