Mom made these, growing up with canned red sockeye salmon, celery, onion, lemon, and crushed saltines. We ate em with ketchup! so good!.

I'm a bit late to this video, but my grandma made the best salmon patties. I make them better than my mom now. Her recipe has canned salmon, raw onion, egg, canned creamed corn, and cracker meal (powdered saltine crackers). Mix by hand until it's nice and clumpy. My grandma always used a small ice cream scoop to measure. They are best eaten cold in the middle of the night, straight from the fridge. My grandparents were planning to go out on their 50th anniversary and were snowed in, so my grandma made salmon patties and mac and cheese for dinner.

I make much the same thing with canned mackerel, but I wrap it around a cube of cheese. The cheese melts and leaves a hole inside so we call it "holy mackerel". I sometimes roll it in instant potato flakes and it fries really crisp.

in THIS house, cast iron skillets are used more than any other skillets. stainless steel is for rice, pasta, chili or soups. i love the way cast iron holds the heat, and cooks the food more evenly than anything else. we dont make sauce to eat our salmon patties with, and where you use flour and baking powder, we use cracker crumbs, does not matter if saltine or the ones with the butter tops. we just turn them into crumbs and mix and fry. when the camera showed the salmon patties cooking, i am tellin you, i smelled home made salmon patties cooking, when you squeezed lemon juice on them, i actually tasted fish with lemon. in my opinion, lemon and black pepper go together with almost any fish.

After watching last night I had to make Salmon patties for lunch today. I made them outside on a Colman stove in my vintage # 8 Griswold cast iron skillet. Hmmmm good. Did the happy dance too.
