The secret for me is using "buttermilk" with plant milk and some apple coder vinegar. It give the pancakes a really nice rise when it reacts with the baking powder and soda!

I try to make boxed baking mixes for breads and muffins because the ingredients is cheaper that way. To make them vegan i used flax egg. The muffins and banana bread both were so heavy physically and dense like a brick lol. Would your pancakes tips here help?

Unfortunately not for baking, no :( there is too much batter “weight” so they will fall flat! I would actually suggest adding 1/2 tsp of baking soda to the dry ingredients and 1 tbsp of vinegar or lemon juice to the wet. Once they combine they react and form bubbles, which helps make the baked goods rise more in the oven!
