Cranberry/Orange bread
No fancy tools needed, easiest recipe!
Ingredients:
* 1 1/2 cups all-purpose flour
* 1 tsp baking powder
* 1/4 tsp salt
* 1/4 cup milk, room temperature
* Zest of 1 large orange, divided
* 1/4 cup orange juice, freshly squeezed
* 6 Tbsp unsalted butter, softened
* 3/4 cup granulated sugar
* 2 large eggs
* 1 1/2 cups fresh cranberries, rinsed and patted dry
* 1/2 Tbsp all-purpose flour
Procedure:
* Preheat oven to 350˚F. Butter a bread loaf pan, then dust with flour, tapping out the excess flour.
* In a mixing bowl, whisk together: flour, baking powder, and salt. Set aside.
* In a cup, combine together milk and orange juice.
* In a large mixing bowl, with a fork mix together butter and granulated sugar, until well combine. Beat in 2 large eggs, mixing until well incorporated.
* Add liquid in 3 parts and alternate with dry ingredients in 3 parts also. Once, all liquid and dry ingredients are well combined. Set aside
* Mix fresh cranberries with 1 Tbsp of flour and mix. Then add to mixture and fold until all of them are covered.
* Transfer mixture to bread loaf pan and past 15 minutes of preheating the oven, bake the cranberry/orange bread for 45 minutes. Do the toothpick test, if it comes out clean, take it out and let it cool before serving.
