Sam please by pass any of those types of negative comments. It's your channel you do you. When I watch I take it as a recipe you tweaked to make it maybe taste better or make it faster with less dishes. What ever the change is or isnt just keep being you. Real. I enjoy being a subscriber. Look forward to your recipes and have enjoyed the many I've tried with or without tweaks.🐶😊

Hey Sam! Don’t worry about making it authentic. All fettuccine Alfredo is Americanized and most real Italians hate it and will be negative about it no matter how well it’s made.

Fettuccine Alfredo is one of my favorite dishes so I decided to make your recipe for dinner tonight. Definitely a keeper!! So so flavorful and delicious + so quick and easy to make! Everyone agreed👍 No need for any changes. I love to add shredded chicken & broccoli. Yum!

I prepared this following your recipe exactly, well almost exactly. I added a small amount of rotisserie chicken (just to make it a complete meal) to the sauce after it was done. It was fantastic!

I use the Kirkland pre-shredded Parmesan Romano cheese blend & it still develops a smooth texture to the sauce. It still melts well into the sauce. The last time I made this dish, it was so good with it. So I guess that because we are home, we should feel free to do anything we want to any recipe out there & as long as we like it, that is the most important thing.

No apologies necessary. Recipes for anything vary from country to country, and region to region. Each has its merits. The OG is rarely the best anyway. Experiment and go with what you like. The alfredo recipe my wife and I make comes from my dad. It's far from traditional, but we love it. The texture and richness is better than what is called traditional. Good for you Sam on cooking what you like.

I’ve made authentic fettuccine Alfredo with just butter and Parmesan Reggiano and one with heavy cream like this recipe and I prefer the heavy cream recipe, both were good but the depth of flavor was richer and deeper with the heavy cream recipe. Y’all tripping if you think the “authentic” one tastes better, yes it’s lighter but that’s it.

I don't consume a lot of dairy. I have used cocnut cream as a substitute. It turned out pretty good. And yes, do not break the pasta. 😄 My mom's half Italian, we don't break the pasta.

Would love to try this. However, I like adding chicken, or shrimp, mushrooms, broccoli... etc. When should I cook and add them? Cook separately and then add? Or warm them up in the sauce? This part always confuses me... THANK YOU SO MUCH!

I would sauté the protein first, then remove to a plate. Add the veg all at once. When the veg is done and your ready to add the cream and cheese, add the protein back in. I would also use frozen/blanched broccoli cut quite small. Fresh broccoli may take a while to cook and screw things up.

@@pinkshamrock5590 That's kind of a general rule of thumb to use for meat. Shrimp can overcook quickly and get rubbery. May be able to just toss those into the vegetables as the veg is about half way done.

Personally I don't care for either. I prefer stainless steel or cast iron, I'll use non-stick very rarely but would rather avoid it.

To those complaining that this is suppose to be made with butter and not heavy cream; please tell me how you make butter...? I'll give you a hint it isn't butter that makes butter...LOL. You are essentially using the exact same item in a different consistency. One is whipped (butter) and the other the fat in the heavy cream's is just suspended in the water/milk (known as buttermilk). It's so stupid to be hung up on such a stupid thing, when you aren't using such a different item from what the "original" person that made this used. I see tons of people using anchovies in their caesar salads when "the original" only used worchestershire sauce as the only source for anchovies, but do I flip TH out over it NO.
