Thank you Micah for this wonderful and super simple dessert! I made this for my mother today and she loved it!! I didn't have any double cream at hand for the topping so used creme fraiche which worked nicely. Not from the South so am enjoying getting acquainted with this style of cooking 😊.

👍 nice pie....looking at the typed out recipe...there’s an * astrik after the coconut cream 🥥 but didn’t see a note at the bottom in it’s regards??? Those egg whites would have made a nice meringue 😀 PS-what is the special note for the coconut cream???

Debbie Reeves thank ya 😃 yep, makes sense to me...used coconut cream recently in a cake batter. Had to order it off Amazon. Have a few cans left and can not wait to try this wonderful recipe with coconut rum in place of the coconut extract and a meringue.

5 egg yolks , 5 tbsp of corn starch total of 3 cups whole milk or half milk and half coconut milk you will get more custard and thicker

Can you explain coconut cream? The only product I can find that says cream is what you make pina coladas with

If you only have coconut milk (as I did) you can use it and add some coconut flakes then use a blender or food processor to make the shreds into tiny bits. You then use the specified amount.

I think that is actually called cream of coconut that you use for pina coladas..not that I've ever made those or anything, LOL
