I like that a chef who's employed at an establishment like Ritz-Carlton, where patrons will be treated to the world's finest dishes, puts the humble indo-chinese recipe of Crispy Chicken in his top. My brother runs a cafe in Goa and truly makes some of the best sandwiches you will ever have on street-level, but he will absolutely kill to have something as simple as "Varan-Bhat" once he comes back home.
