• Ingredients: Crispy peanut buns
All-purpose flour 500 grams, 0:27,
Yeast powder 5 grams, 0:27,
Water 320 grams, 0:36,
Peanuts 250 grams(baked and cooled), 1:00,
All-purpose flour 300 grams (it will be about 250 grams after baking, then let cool, mix with peanuts and beat into powder, the finer the better), 0:27,
Salt 5 grams (can be replaced with 80 grams of sugar to make sweet buns) 1:53,
Peanut butter 100 to 150 grams (add according to the consistency) 2:05,
Brush with liquid egg and sprinkle with sesame seeds 4:14,
• Baking temperature: Preheat the oven to 280 degrees for top heat and bottom heat. Bake on the lower rack for 12 minutes. If the oven cannot reach 280 degrees, bake at the highest temperature for a longer time.

我没做成功。烤出来口感很硬。花生烤面粉和馅,我只放进去3分之一,怎么能多放呢? 花生酱150g和烤面粉花生碎不能成团,我还加了蜂蜜,馅还是散的。 希望下次能看见您总结最该注意什么?

@@user-jj7ti4rl2f 发面团发好后很粘手。面和的不硬。花生酱有些干但也放到视频里说的最大量。我看了其他糖酥饼的视频,觉得是没放油的原因。酥饼的酥全是油的作用

麵粉分批混合,各地區的花生與花生醬含油量不一樣,可以備一些花生油調整黏性,另外油酥裡頭不能放水(蜂蜜)不然麵粉產生筋性後會黏,與外頭白色的水皮黏起來而無法分層酥脆(沒有酵母的麵團黏一塊烤乾後就會轉硬)
