I just bought a couple of tins the other day. I can not remember what kind they were. I just looked, Ocean Prince. I have been eating smoked oysters for decades, maybe only 6-10 tins a year. I usually have a tin in the pantry ready for some Franks Red Hot and my vigorous consumption. Oysters come in groups like, good one, bad ones. They are a fickle seafood as far as taste consistency. Even the oysters have health benefits with omegas, vit D, and iodine. You will probably live to be 100. Do you eat beef? I eat pork for flavoring only. Like bacon and sausage. I don't eat pork chops. I will eat ham at holidays, other I will be a strictly beef man. No Chicken whatsoever. I watched 'King Corn' doc. I have not eaten chicken since then, probably about 20 years now. I will eat chicken noodle soup, but no hot wings, just meat items. I augment my beet meat diet with sardines. I used to eat a lot of kippers. Eating kippers around Christmas is like part of the Lutheran religion where I am from. If you have no kippers on the day before Christmas, you are SOOL where I am from. It may be the only thing the whole store will be out of at Christmas. I think this comes from people eating lutefisk. Now, lutefisk is so hard to find and so nasty, people just substitute kippers for lutefisk.

Howdy from Texas. I love oysters. I was an oyster shucker for over three years working at a busy seafood restaurant at the oyster bar. I got to eat fresh oysters every day. Poor me, right ? 🤠 I've loved sardines and canned oysters forever and smoked oysters always have a spot in my pantry. The texture of the smoked oysters is a contrast between the pate like creaminess of the oysters body and the slight chew of its tender rubbery like foot. I absolutely love them on Original Ritz crackers. Just a tip from an oyster connoisseur and former professional Oyster Shucker. I've had oysters just about anyway you can have them. And when it comes to fresh raw oysters on the half shell. I've found nothing quite beats the simple preparation of just a squirt of lemon or lime juice and a small dab of hot or extra hot horse radish . That's it. I never could understand why people who claim, at least, to love eating oysters bothered even paying for and eating them considering just how many strong flavors they insisted on covering up the natural flavors of the oysters with. It always amazed me. And for God's sake people. Give your raw oysters at least a single chew before swallowing. Otherwise you are just wasting your money and missing their true flavor. But in the world of food. I definitely believe in, " to each their own."

Now that you've started down THIS rabbit hole, allow me, a decades-long, canned oyster eater, to share some advice. Try Reese brand Smoked Oysters if you can find them. They are smoked with Cherry wood and packed in cottonseed oil. They come as Petite, Medium or Large sized oysters. The different sizes each have their own flavor and mouth feel. When I want to eat them ON something, I always use Toasted brand Savory Onion variety cracker, (A Keebler product at one time, but now the box says Kellogg's) which also happens to change the whole flavor profile of peanut butter and crackers, so try the cracker that way too. Stay away from the canned oysters that come in the tall round tins, such as Geisha brand
@SardineExpeditionАй бұрын
Thanks for all the tips!! I have seen that Reese brand and wondered about those! Cherry wood sounds lovely! Do you have a preference on which size you like best??
@mrhalfstepАй бұрын
@@SardineExpedition The petite ones are about the size of a man's thumbnail so the organs are smaller and the bite is probably the firmest. The medium ones probably have the most equal range of soft to firm parts and the large would be like a small deviled egg, in that, the outside would be firm and there would be a squishier inside part like the yolk and mayo mixture. None of it is as soft as an actual deviled egg, but that is the best picture that I can paint for you. The large may be a bit bigger than the ones you ate, but not by much. I eat the petites when I'm going to just eat them alone, the mediums are usually, but not always, eaten on those crackers (gotta try 'em!) and the large ones get individually mashed up with some of the oil and spread on the cracker. That happens with the mediums too, sometimes. They would be my slight favorite. They used to have a size that they called Colossal, if I remember right and they were BIG and made a tasty mash up.

@SardineExpedition I do cold smoking, it works great for things like cheese or even cured meats such as ham or bacon to just give it that extra kick of flavor, in Utah right now you could cold smoke anything, it's refrigerator temp outside, basically it's just you don't have a fire, you use pellets or sawdust of whatever wood you like, and it just slowly smolders while keeping the temp low enough to not put the food in the danger zone as far as temperature.

I grew up on the coast of North Carolina so I like both raw oysters and clams, and both fried also. I've eaten Smoked Oysters for years, normally gravitating to the cheapest can I can find. Currently, I'm buying the NIXE brand by Lidl that only cost $1.29 a can. Sometimes I'll eat them with French's yellow mustard. But I really like smoked oysters with hummus. I'll chop up some sweet onion, and sweet bell pepper, and also eat some olives. I'll rotate through the smoked oysters and the other items mentioned. -- A few years ago I opened a can of "Season" brand anchovies and they looked so beautiful, and tasted great too, so I bought some as Christmas presents for my family/friends. I like them on a pizza, but I'll also slip them into other things I am cooking on the stove. They disappear during the cooking process but add an extra flavor to the finished product, and it's not a fishy flavor.

@@SardineExpedition Yea I heard it the second time. You also said they were sweet. I’m Super fussy on canned fish and the salts. Salts used from different places make a difference in flavor too. Lionel here in Central California. Surprised to see an American woman doing a review on oysters, much more sardines. You go girl. Not saying you didn’t get it right, but a true test is brand to brand taste, oyster with rind and oyster with rind, then o and r with sauce, and other brand. The way it was done, the taste buds are compromised with the rind and hot sauce. Just saying… The way I like them, a coating of salt while in the can and saltines along with an ice cold Pepsi.
