Light, airy, and crunchy, these amaretti cookies are very similar to those imported Italian ones, except you can make them at a fraction of the cost! These are so easy to make and perfect for holiday baking or gift giving. I'm not even gluten-free or dairy-free, but I enjoy them as much as other types of cookies. I hope you'll try these!
Recipe (Makes 30 Cookies)
Ingredients:
2 Egg Whites
¼ tsp salt
¼ tsp Tartar
100g Powdered Sugar
1 tsp Vanilla Extract (or ¼ tsp vanilla powder)
½ tsp Almond extract
120g Almond Powder/Flour
20g Corn Starch
1 TBSP Powdered Sugar for dusting

After the cookies are completely cooled, store them in an air-tight container for up to a week. If they get a little moist and start to lose the crispiness, put them in the oven for 30-40 minutes at 200F. (You could also microwave each one for 10-12 seconds and let it cool completely.)

Ingredients:

1 tsp Ground Ginger
