I have never heard of this combination. Work a lot with all the ingredients... i dont cook a lot at home but im so tempted to try this one :) thanks for posting

Thanks for this recipe. As I have diabetes I am substituting potatoes with celeriac and sweet potatoes to keep the carbs down. I think I might try briefly microwaving the raw veges rather than boil them

Keep the veg water to make stock or better steam the veg

How long do have you boil the celeriac and parsnips for? Is it 4 or 14 minutes

Hi there, the recipe does call for the celeriac to be parboiled for around 2 minutes. The majority of the cooking will be done in the over. Hope that helps! Best, Sam.

Jamie Oliver would advise you not to peel the Parsnips as there is so much goodness in the skins. But I do like the sound of this recipe so thanks for it.
