Ingredients:
Make One 6 inch Tart.
Perforated Tart Ring: 17cm Diameter x 3cm Height
French Vanilla Tart Crust:
65g unsalted butter
¼ tsp vanilla paste
45g icing sugar
22g whole egg(room temperature)
11g almond flour
110g cake flour or all purpose flour
¼ tsp of salt
Lime Almond Cream Filling:
50g unsalted butter
50g granulated sugar
50g whole egg, room temperature
50g almond flour
¼ tsp vanilla paste
¼ lime or lemon zest
Mint Custard Cream (Pastry Cream):
2 egg yolk
50g granulated sugar
16g cake flour
170g whole milk
4~5 mint leaves (or omit the original custard sauce)
12g unsalted butter
50~60g raspberry jam:
Fresh strawberries
Mint leaves (decorative/decorative purpose)
