You guys ALWAYS INSIST on her return so Deddy's sweet thang is BACK! We're learning how to make Deddy’s ANDDDDD Mummy's (but really Mumma Sheila's) famous #JamaicanBlackCake!! There's LEVELS to baking #JamaicanRumCake and the first level is knowing when someone else a BETTER! Lol! Now that you're learning Mummy's version...you're about to set your RUM CAKE apart from the rest! Welcome to Deddy’s Kitchen!
Ingredients
For pound Black cake:
1) 1 lb of salted butter
2) 1 lb of brown sugar (2cups)
3) 2 cups of organic flour
4) 2 cups of plain breadcrumbs
5) 4 teaspoons of baking powder ( magic brand)
6) 1 dozen large eggs
7) 1 lb of raisins
8) 1/2 lb of prunes
9) grated nutmeg
10) cinnamon
11) vanilla
12) mixed essence
12) lemon rind, grated
13) Burnt sugar ( Irie brand)
14) Browning ( grace or unpack brand)
LIQUOR:
1) Manecheviz wine
2) Wincarnis wine
3) Red label wine
4) Wray and Nephew Rum

*Reminding you *1lb sugar = 2 cups *Flour is lighter and so, 1lb flour = 3 cups (which can also be 2 cups flour along with 1 cup breadcrumbs)

I'm watching this and am soooo emotional. I lost my darling Mom just over a year ago and watching your Mom bake this cake is the closest to how my Mom did her cakes. I always assisted her and it was such a joy. When your Mom said 'it's coming to come' I started crying as that's EXACTLY what my Mom would say. Like y our parents, my Mom was heart and soul JAMAICA! 3 years later but I enjoy watch and reminiscing about my childhood days when I shared the job of creaming the butter and sugar with my sisters. This brings back sweet memories of my mom. Can’t wait to try this. I haven’t tried making black cake as an adult. I’m ready to get back to my roots! Did your mom call your dad “Boo”?

Sorry for your lost. I also lost my mom almost 13 yrs ago. She baked at night so none of us knows how to make black/rum cake so you have been my go to, 2 yrs now. Thank you mom, dad and daughter. Am I glad to see someone gets the eye of the egg out!!! Everyone who sees me cooking with eggs asks me why I do it, I learned it from my mother but she had a nasty name for it, whatever the reason, it stayed and I always take it out. Thank you for not leaving me by myself in this business of egg's eyes :)

I'm a new comer to Deddy's Kitchen from the UK and I absolutely love the family vibes! My mum and dad both passed October/December 2019 and how I miss them but more so my mum assisting me in the kitchen telling me how to cook jamaican dishes the correct way and the accent! You're overbearing the batter after you added the flour, which should be folded in. Your cake will be tough.

You cold divide the mixture in half, then pour it into the bigger pan and save yourself the hard work..or use a had mixer for the bigger bowl.thats way too much unnecessary work. You guys are not working smart.It looks like it curds. The eggs might be cold and the other ingredients are at room temperature.My mom makes cakes but she does it a bit different, she mixes the baking powder, the flour ,the spices nutmeg, cinnamon bread crumbs,then she uses a strain and sift it in a separate bowl of the she gradually adds it to the batter of sugar , butter and eggs.

Oh wow! I so enjoyed this. I remembered my Mom making this years ago. But just like many Caribbean moms, she never used a recipe. She was originally from Antigua 🇦🇬. Moved to St.Croix US. Virgin Islands 🇻🇮. I remember her using the bread crumbs which she made from toasting left over bread and the fruits I can remember her soaking in a big jar for years on end. She also when she made it used to put them in those Danish butter cookie tins that they had back then, seal it, and immerse them in a big pot of boiling water. You brought back so many good memories for me, when I watched this. This year will be 15 years since She passed. I will definitely be trying this recipe. Thank you so much for this!

Everything looks good except for one thing. Way too much unnecessary sugar going into your body. The fruits are already sweet. Port wine and Wincarnis wines are already sweet. So is the burnt sugar and then 3 lbs sugar. Those cakes are gonna be dangerously sweet and unhealthy for the body. I guarantee 2lbs sugar or less would make the cakes just as enjoyable, just as delicious, but not so sweet. I bake black cakes a lot and use half the amount of sugar and they come out great but not as sweet. Please try it and see.

The sugar was added base on the size cake the lady make it clear besides that they all are doing a fantastic job..i don't eat sweet's an u don't see me finding fault if you don't eat sweet's u have an option to eat or not...🙄🙄🙄🙄

Her recipe says 1lb sugar = 4cups when it really = 2cups. So yes, thats way too much sugar.

My mother is 93 from Jamaica her mother every year made rum cake. Miss Sheila is so sweet love her and Deedy. I followed this recipee and everyone loved it. Just as my grandmother did I watched Miss Sheilas using this recepee and have started this tradition again in my family. Thankyou Miss Sheila you are both such a sweet couple. My wife and I are in Portugal. She loves the Jamaican steamed black cake and made your recipe today. This cake is outstanding! Thank you for sharing your family's recipe. The explanation of certain things also helped greatly.

I AM JUST REMEMBERING ALL THOSE YEARS AGO WHEN MY GRANDMA AND AUNT USE TO MAKE CHRISTMAS RUM CAKE MY GRAN USE TO PUT HER FRUITS TO SOAK FROM JUNE TO JULY IT WAS TO DIE FOR IT WAS SO GOOD MISS YOU GRANNY AND AUNT PHYLL AND MUM .

Happy holidays to you all. This brings back a lot of childhood memories when all the women of the family who lived close to each other would get together in October each year to bake cakes as a small girl I loved it. When I joined my mother in the UK at the age of 14 it was now just mum and I as the years passed this tradition continued now it's my husband children and I going to mother in November to bake for Christmas and distribute to family. So thank you thank you very much for evoking these happy memories. I would like to say Mr Deddy's your wife looks like family to me, however do continue to take care of each other. Blessings for 2023😀

Omg the last time I had this cake was over 10 yrs ago and I was determined to make I search videos and came across which I remember the texture (and LOVED became a subscriber 😊) and omg it was a hit for my FIRST time and I thank deddy kitchen KZbin (with mommy tutorial) that made it possible ❤❤❤❤❤😋😋

Its a caribbean thing no eye or thread in eggs. Lemon or lime zest get rid of the fresh / freshy/rank/raw smell from the eggs. Love your family dynamic. Not fake. Feel the love.

OMG!!! Your Mom and Dad remind me so much of my childhood memories but we didn't have social media so they're all in my head and my heart. What a BLESSED moment you have shared with us through your family. I hope you realize how precious these moments are in the development of mentally healthy children who become well developed adults. We need more displays of family moments like this. This is what is missing in our society today. May THE MOST HIGH bless you and your family. I baked this cake for an 8 inch tin following pound for pound it was big. I split mine into a smaller tin. I had a 9inch and 5inch. But let 👏🏽me 👏🏽 tell 👏🏽 you👏🏽 This recipe right here is the BEST. Sooo much flavour and moist whoooiii praise God! I don’t even wanna share it 🤣🤣🤣🤣🤣 Thank you ❤😊

Girl! Mummy’s giving us all the tea. No but if information left behind and I love it. This is what I needed. My boyfriend is Jamaican and although I’m of Caribbean descent as well I’m not Jamaican. This will be the first year since he’s been “a foreign” 😉 that he’ll be actually celebrating Christmas so I want to make it special. I made it my way last year but hopefully making it this way this year will feel more authentic to him. Thanks for this!

Thank you I come back here for ingredients measurements.. and inspiration Lol. I've only started to bake my own cakes in the last year or so and enjoy getting great results. I normally go for a 1lb cake mix and get 1 large cake, 1medium and 2 regular square tins and 12 cups cakes which is a lot. Happy Christmas 👍🏽

Guys please remember this is HER recipe, going by the recipe in the description if you find your test batch too sweet then simply reduce the sugar by half cup so 1 1/2 cups instead of 2, just remember the more bitter your wine is or the blacker you need the cake the burnt sugar and browning is bitter so just experiment, be grateful they are providing this recipe and instructions because these cakes are selling expensive.

@@john-j5657 nobody said it was serious John, grateful/thankful when someone gives you something especially for free at least say thanks instead of criticising too much about something like how much sugar goes into something that is meant to be sweet, use the recipe as a base, learn how to throw it all together then modify and enjoy.

I decided to make this run cake and I Followed the direction of making a 1 pound cake which ended up getting four 9 1/2 inch pan cake out of the mix. It came out so delicious and looking as good as the video shown. I will be definitely be baking it again next year for the holidays. My first time making this cake and it came out excellent and delicious 😋 Daddy’s Kitchen you guys are the best. AA+ in my book.
