Jamaican Patties makes 15 large patties FOR THE DOUGH 1 lb AP flour 1 cup butter, cubed 2 TBSP Jamaican curry powder 1 tsp salt 1 TBSP baking powder approx. 1.5 cups buttermilk 1 stick (113g) butter, frozen 1/4-1/3 cup lard/shortening lots of flour for rolling 2 eggs, beaten, with a splash of water, for egg wash Place all ingredients except buttermilk in largest metal bowl. Use fingers to mash the butter into the flour. Add buttermilk gradually, mix and mash until dough comes together. Do not add excess. Knead a bit. If dough is too sticky, add a handful of flour. Dough should be soft, a bit sticky, but not stick to the bowl. Cover and rest in fridge for 30 min. FOR THE FILLING 1 small or 1/2 large carrot, rough chopped. 5-10 cloves garlic, peeled and rough chopped 1-2 scotch bonnet pepper, deseeded and rough chopped (used 2 small and no detectable spice=use more) “small amount” of ginger, rough chopped 1 small or 1/2 large onion, rough chopped small bowl of green onion, chopped thyme leaves 1/2-1 red bell pepper, rough chopped (optional) 1 cup beef broth (or water) 2 Very heaping tsp Flavo riz (or other vegetable-based seasoning powder e.g. vegeta 1/2 tsp black pepper (be careful) 2 heaping tsp garlic powder 2 heaping tsp all-purpose seasoning 2 heaping tsp onion powder x 2 2 heaping tsp smoked paprika x2 2 TBSP soy sauce 2 TBSP oyster sauce 2 TBSP ketchup 1 tsp browning, or some dashes of Maggi 2 Bay leaves 1 TBSP Jamaican curry pickapeppa sauce 1 small bottle splash worsteshire sauce 3 lbs lean ground beef. Place carrot, garlic, onion, scotch bonnets, ginger, green onion, thyme, water in blender, puree until smooth. In a large fry pan on med-high heat, add olive oil to cover, put blender contents into pan. Stir and cook briefly, turn heat down to medium, and add seasoning powders. Once somewhat dry, add beef, soy sauce and oyster sauce, bay leaves, worsht, pickapeppa sauce. Cook, stirring, mash beef with potato masher. Add ketchup, 1 tsp browning, curry powder. Cover and let simmer for 20-30 min. Uncover and cook until water gone. Adjust seasoning. Take off heat and let cool, about 20 min (or in fridge). FINISH Preheat oven to 400F. Clear entire counter, flour generously. Place dough on counter, flour top of dough generously. With floured roller, roll out dough as large as possible. Grate frozen butter stick on top of dough. Drop dollops of the shortening over the dough. Fold the dough over itself multiple times to form a wide log. Constantly flour generously any sticky surface. Fold into thirds. Roll out flat again. Fold up again. (may need to rest 5 min between rollings). Roll out again for a final time, getting as thin as you can, about 1/4-1/2”. Cut out rounds to desired size (e.g. top of pot, 7”). Re-roll unused dough to make more rounds. Place beef mixture onto each round, egg-wash the edge, fold over and press down, crimp with floured fork. Set aside until all patties are formed. Egg wash tops generously, bake at 400 for 20 min or until browned on top.

Thank you for taking the time to share this wonderful recipe we have a place here in Milwaukee called the upper yard and if you don’t get there before 2 o’clock you would not get to be fed. I don’t get off work until three so I’m gonna try my hand at this recipe so I can always have them on hand for me and me alone. No more spending five dollars for a pie.

You used 2 scotch bonnets and there was no detectable spice?! I can't see how that is possible unless you're immune to capsaicin. Scotch bonnets are really hot compared to the average chilli pepper. I put half a small one in a rice dish for 2 people, and it's hot enough to make my scalp sweat.

I grew up in Toronto and this gives me such nostalgia. We love our Jamaican food, Jamaican patties everywhere, even in the corner stores, Kensington Market etc. The little bakery that used to be at Bathurst station before going to school in the morning, get some Jerk roll up, or coco bread. Man I'm hungry now 😋Love the video!!!

These are my notes. Mostly for me. But maybe they can help you-watch the video ! One note: Being from Texas, I have no idea what Favo Riz is so I used Cajun seasoning (specifically slap ya mama). Worked for me! 😋 1lb flour (I used two cups, fluffed, spooned, and leveled) 1 cup cold diced butter 1 tbs each curry powder and turmeric 1 Tsp salt 1tbs baking powder Cut the butter into the dough (work quickly if using hands) App 2 cup COLD buttermilk (POUR GRADUALLY) Knead to soft dough. Wrap in Saran Wrap and refrigerate. For the patties, add to the blender: 1/2 chopped carrot 1 tbs each garlic Scotch bonnet Ginger 1 small chopped onion 2 chopped scallion 4-6 sprigs thyme 1/4-1/3 c water Blend it all together. Heat 3 tbs cooking oil over med high heat Pour vegetable mixture into hot pan, stir. Season with 1 Tsp each of: Favo riz (more as desired) Paprika Black pepper Garlic powder Onion powder All purpose seasoning Mix well. Season 2 lbs ground beef with teaspoon each of previously listed seasonings. Add to vegetable mixture. Mix well. Add 2tbsp each Dark soy sauce Oyster sauce Mix well until meat is well browned. Add 2 tbs ketchup. 1 Tsp browning sauce Continue cooking ensure the meat is well browned. Cover and let simmer until tender. Remove. Drain grease if desired.Let cool completely. Flour your work surface, pin, and dough. Roll to 1/8 inch thickness. Quickly Grate 1 stick frozen butter over all dough. And a bit of shortening lol. Laminate twice. Roll out to same thickness. Cut out patties, make them square so as not to waste dough. Beef on the patty, egg wash on the edges, fold. Pinch the edges with the fork. Egg wash the top too. Bake at 425 until golden brown

Recipe: Flour 1 pound Butter 1 cup Tumeric 1 tbsp Curry powder 1 tbsp Salt 1 tsp Baking powder 1 tbsp Butter milk or milk about 3 cups (add as needed, a little at a time) Let rest in fridge for 30 minutes covered. Now cook beef: Carrots 1 Garlic Pepper Ginger Onions Scallions Thyme A little water Ahh screw it I'll do the beef my way... 😂 Thanks guys!

I made these beef patties today. OMG! They were really Good. It was a lot of work but the end result was spectacular! Needles to say I made 10 and there almost gone. Thank you I love being in Deddy’s Kitchen!

That is what got me glued to the video and I loved what I saw. She is so sweet, and he is a great cook. I could picture my youngest sister Jennifer talking to dad and dad cooking, they would make a pair just like this one, and me, well, the one who is walking around trying to steal a bite :)

I've been using this recipe from Deddy for about 18mths. It is the best patty recipe period. The only problem is now I gotta make it constantly for my kids, it does take some time but you will not regret the end result. I take two days to make it one day dough, next filling and assembly. Best patty recipe hands down!

I tired this recipe using grounded turkey. I try to stay away from red meat. It was absolutely delicious I can’t express enough how much I enjoy Deddy’s Kitchen. Watching and cooking with him has taken my food to a whole new level. It’s all about the seasonings and washing of the meat. All the best to Deddy and the family. Keep up the good work.

SOAK your turkey or chicken in salt water for about 3hrs then rinse. Removes all blood.

Now patties are being made with whatever you want. I've had lentil, pumpkin, jerk plantain, call Alon, Ackee, salmon and more. I'd like to try a green jack fruit.

I'm from South Florida and moved to Augusta. Georgia over a year ago. You can get decent patties everywhere in Florida. But here it's so hard. Now we only get them when my wife family brings a box of tastee patties from jamaica. I can't wait to make these at home. Thank you for the recipe!!

The reason why we ask for the homemade 🇯🇲Jamaican🇯🇲 Patty recipe is because the stores down here always run out of the distributed kind and we can't find anymore street vendors to make them from scratch like Deddy. Forward Jamaica!

I recently came across this video and was so happy. I grew up in NYC and Jamaican patties were my favorite school lunch. I made the dough and was so surprised how soft and moist the dough was even after continuous sprinkles of flour when rolling it out. The beef was slightly off on the flavor (I think I put too much curry powder and I didn’t have the browning sauce). BUT in the end I am SO very happy with how the patties turned out for my first attempt. The dough was actually perfect in taste and texture. Thank you! If you have any oxtail recipes… I definitely would be interested in that!

Many process mistakes doubling up on ingredients let it cool but put lid on surely not pour onto a cool tray and leave uncovered would work as would melting the butter and brushing it between folds for a more even distribution of flaking effect on pastry ?? etc .. nice people tho “The Patty people ... patty on guys !
